I eat a lot of plant based food! But I also eat meat these days and feel good about it. I know when I need it and I know when to take a break. 🍁Pumpkin Spiced Overnight Chia & Oats Parfait with Sautéed Cinnamon Apples 🍎 
I soaked my chia seeds & oats in my homemade sprouted almond milk last night. Then I just mixed in 2 tbsp pumpkin purée & pumpkin spice and layered it with sautéed apples (from our tree) , some of my superfood bar crumbled & a dusting of bee pollen 😋 I highly recommend trying this! I like to sauté my chopped apples in ghee, vanilla, & cinnamon in my cast iron 😉

Fall Equinox weekend means it’s time to experiment with Pumpkin, right?! 🍁 I made this pumpkin cheesecake last year but not with a dark chocolate almond butter sauce on top! Don’t worry I tried them and they are definitely edible, I didn’t want to share! I brought them to a potluck and they got gobbled up quickly 😊 It was really nice to hear a handful of people tell me how good they feel eating my desserts! To me that’s the best compliment because everything I make is nourishing and meant to make you feel good afterwards 💜🙏🏼 These are not raw hence the cooked pumpkin but still dairy free! First time making ceviche! It’s super easy & tasty with all the fresh tomatoes from the garden. I used mahi mahi for the fish and I chopped it up pretty small. Put it in a bowl with fresh lime juice and sea salt and let that marinate (cook) for 30 or so minutes. Then I added in fresh chopped tomatoes, minced cilantro, diced red onion, minced Serrano & jalapeño peppers, granulated garlic, sea salt, more lime juice and chunks of avocado. Abel has been my garden helper lately. He helps to harvest the veggies, water, pull weeds, whack things with sticks 😬 find bugs and other animals, and munch on things. Our kids have been exposed to gardens since they were born. Back when they were babies I would just plop them down on the ground so I could plant my summer crop! Or their Dad would be using the machete chopping down overgrown weeds with them sleeping in the carrier on his back! I always encourage my kids to play outside. And involving them in the garden teaches them so much. They get to see how a seed grows into something beautiful or something yummy to eat. Patience by having to wait to pick a fruit that’s not ripe yet (and mama too by letting go of them messing up my perfect rows!!) it teaches them about where food comes from (not just the grocery store) and trying vegetables because they are so delicious just picked! Plus eating dirt from healthy soil is good for you (not joking) Back to this picture which I just love ❤️. Abel has been my garden helper lately. He helps to harvest the veggies, water, pull weeds, whack things with sticks 😬 find bugs and other animals, and munch on things. Our kids have been exposed to gardens since they were born. Back when they were babies I would just plop them down on the ground so I could plant my summer crop! Or their Dad would be using the machete chopping down overgrown weeds with them sleeping in the carrier on his back! I always encourage my kids to play outside. And involving them in the garden teaches them so much. They get to see how a seed grows into something beautiful or something yummy to eat. Patience by having to wait to pick a fruit that’s not ripe yet (and mama too by letting go of them messing up my perfect rows!!) it teaches them about where food comes from (not just the grocery store) and trying vegetables because they are so delicious just picked! Plus eating dirt from healthy soil is good for you (not joking) Back to this picture which I just love ❤️. Spiralized zucchini into “zoodles” with a tomato sauce with ground buffalo on top. Sautéed the ground buffalo in some avocado oil adding it to your favorite pasta sauce. If I don’t make mine own I always look for an organic tomato basil sauce with no added sugars or any other yucky ingredients that don’t need to be in pasta sauce. I was pretty bummed I got a cold 🤧 but just because we get sick every once in awhile doesn’t mean we have a bad immune system. It means a strong body will react with increased immune response when it senses exposure to pathogens. So what do you do? Rest, take care of yourself, drink teas, bone broths, soups, and sleep 💤. I’m feeling better already 😀 this is one of my go to soups when somebody’s feeling under the weather. In a pot, mix mushroom broth, chicken bone broth, lots of fresh thinly sliced ginger root & turmeric root, carrots, & dried reishi and bring to a slight boil turning to low adding in cabbage, greens, shiitakes, zucchini, tamari soy sauce, toasted sesame oil, and granulated garlic. I cooked soba noodles on the side adding them in. Seared in my cast iron for 2 minutes each side then put in the preheated oven at 415f for about 12 minutes (depending on size, mine weigh 1 1/2 pounds) and check with meat thermometer until it reads 145f. Let sit out to rest for 10 minutes covered. Then slice against the grain. Enjoyed with sautéed onions,  zucchini, shrooms, & corn off the cob, fresh peach salsa, guacamole and my fermented cashew cheese on cassava tortillas @sietefoods !! Here’s the Peach Salsa Recipe 
5 or 6 ripe large tomatoes, chopped small
1 small red onion, minced
1/2 cup cilantro, chopped 
1 large peach, diced small
1/2 jalapeño minced
3 tbsp lemon juice
1/2 tsp granulated garlic
Couple dashed of cumin & chili powder
1/2 tsp sea salt to taste

Let’s start this Friday off right with this Dark Chocolate Bark. I love making treats like this. Real ingredients, low sugar, feel good, healthy desserts👌 Chocolate will always have my heart 💜 and I love using cacao, which is the rawest form of chocolate from the cacao tree. Cacao is a super star- full of antioxidants, magnesium and iron!! Natural mood enhancer and just an all around feel good brain food 🙌🏻 with that said here’s how I make my easy bark.
Using double boiler method, I melt equal parts of cacao paste & cacao butter @divineorganics about 1/2 cup each, just eye balling works great. Once that starts melting I add in 2 tbsp coconut oil, 1 tbsp vanilla extract or 1/2 tsp vanilla bean is better if you have it, 1 tbsp chaga mushroom powder @sunpotion (optional, adds more nutritious value) and 1 tbsp of manukau honey @manawa_manuka_  or more but I like to keep mine extra dark and 1 scoop of @vitalproteins collagen coconut creamer (optional too) but adds all the great benefits of collagen plus a creaminess. Stir all that well. I line a baking sheet with parchment paper and I poured the melted chocolate mixture on that. Adding in chopped sprouted pecans, dried fruit like gojis, mulberries, and golden raisins, cacao nibs and pumpkin seeds!! Let set in freezer until hard. Break into pieces and enjoy!! I love tacos 🌮. They are so darn easy and you can put basically anything in a tortilla. What’s your favorite time of the day? I’m such a morning person. Something about a new day excites me & what a blessing to be alive 🙏🏼 I love waking up and starting off by moving my body in some form of exercise, my morning Celery Juice and then caffeine beverage 🍵 , feeding my family breakfast and starting the day. I wake up extra early so I have time todo all this without too much rushing. I’m excited for the fall season! The sun is setting earlier and the nights growing longer. The fruit is changing like apples & pears, which means sautéing apples for my chia & oats in the morning 🙌🏻 I simply chop up a couple apples, heat my cast iron with ghee or coconut oil and sauté the apples until golden in color and slightly soft adding in a touch of vanilla & cinnamon. This is my daughters new favorite. Sprouted bread with cashew butter, bananas, local raw honey 🍯 & cinnamon. Just give her the jar of cashew butter @artisanaorganics , she loves it! Who else has kids? It can be hard feeding them and know they are getting enough of what they need to grow healthy & strong, right?! I do believe they eat intuitively and know what their bodies are craving & need. Like myself I don’t want somebody just saying here’s what we are eating. I like to give them choices and options. Ask what they want to eat so they will actually eat it. And candy/sugar is out of the question! Sometimes I wonder if I’m too strict. I find it helps letting them know why they can’t have something but also letting them experience how it feels to eat too much is a great lesson too! We keep our fridge filled with lots of fresh organic options and don’t keep junk in the house. Sugary treats are given to kids daily now! What happened to special occasions? This is my daughters new favorite. Sprouted bread with cashew butter, bananas, local raw honey 🍯 & cinnamon. Just give her the jar of cashew butter @artisanaorganics , she loves it! Who else has kids? It can be hard feeding them and know they are getting enough of what they need to grow healthy & strong, right?! I do believe they eat intuitively and know what their bodies are craving & need. Like myself I don’t want somebody just saying here’s what we are eating. I like to give them choices and options. Ask what they want to eat so they will actually eat it. And candy/sugar is out of the question! Sometimes I wonder if I’m too strict. I find it helps letting them know why they can’t have something but also letting them experience how it feels to eat too much is a great lesson too! We keep our fridge filled with lots of fresh organic options and don’t keep junk in the house. Sugary treats are given to kids daily now! What happened to special occasions? We had a special sacred women’s sweat lodge last night to honor us and all we ladies do daily. The men watched the children, cooked a beautiful meal laid out on table cloths, filled with candles, lights, and flowers 💐 served us and cleaned up. I even got to sleep in till 11 this morning! Having a special slow day filled with coffee, and these yummy Pomegranate Raspberry Superfood Truffles 💗 Make them if you need a sweet treat in your day, here’s how. So excited I finally busted out my mandolin. It’s perfect for slicing consistently even veggies. Plus it’s fast. I sliced my Zucchini’s in no time for my dehydrated zucchini chips. I highly recommend getting one. My big salad today consists of salad greens, romaine, micro greens, purple cabbage, cucumbers,  Zucchini chips, sweet potato chips, and a scoop of tuna salad. I like using @safecatchfoods tuna because they test every batch for higher levels of mercury. Happy Morning friends! After a week of coffee I needed a Matcha. For those of you who aren’t familiar with matcha (their might be some people 😉) it is a green tea that is in powdered form so they grind the whole tea leaves. Making it high in chlorophyll, vitamins, & minerals. It is green tea so does contain caffeine. It helps boost metabolism, high in antioxidants and helps with anti aging. I heat about 10 oz water, 1 tsp matcha powder @domatcha , 1 scoop of collagen @mynaturalforce , 1 tsp maca powder, 1/2 tsp he shou wu @sunpotion , 1 tsp spirit dust @moonjuice , vanilla, cinnamon, 1 tbsp coconut butter @thephilosopherstoneground , and 1 tsp ghee @fourthandheart . Blend well in vitamin until frothy. Pour in mug then I did Cory’s trick from @tinycleankitchen and heated a few ounces of cashew/almond milk blend then frothed it in my blender adding to the top of my matcha! Taking the time to prepare nourishing food  for yourself 🌱 I am kid free for a few hours and I decided to come home and prepare myself a healthy lunch with no rushing or interruptions. Walking to the garden to get salad greens, basil, and other ingredients, chopping and filling my bowl with intention, & then eating slowly with gratitude 🙏🏼. I may not always have a peaceful meal like this one but I will try to take more time to sit & be still when I eat. I didn’t know this was what I was going to create until tonight when I saw the peaches & tomatoes from the garden on my counter top 😍 Pan sautéed Wild Salmon with fresh peach salsa, sautéed spinach & zoodles (zucchini noodles). Then turned into my lunch today 😊 My stir fry had tempeh, onions, sweet potatoes, broccoli, kale & mustard greens, zucchini and crispy green beans. My heart ❤️ is full. What a weekend filled with friends, nature, love & laughter. It’s truly the best medicine. Our first Ninjas in Nature Camp in the books. Our days were disconnected to technology but immensely connected to one another. We learned ninjutsu moves, fox walking, camouflaging, carving ninja sticks, building fires, practicing Japanese calligraphy & origami, identifying plants, playing games, met new friends, and so much more! Camped as a community with friends, cooked & ate food together, sweat & prayed in lodge, laughed, got dirty, slept under the stars & moon. Even though I’m tired & dirty, I feel whole, so grateful for this community, the people who love my kids as much as their own and for the children who teach me so much about being present, keep me smiling, and on my toes! 🙏🏼💕 Back home, making smoothies for ya! I hope your weekend was great too. Anyone else love cooking rice in the instapot? I like using short grain brown rice and use the 1:2 ratio. Set it to 12 minutes and bam you get the best rice. Perfectly tender & sticky. Sautéed up onions, mushrooms, peppers, carrots, zucchini, and kale with some spice, plantains sautéed in coconut oil, and lots of avocado 🥑. Happy Sunday! Zucchini Breads have basically been on repeat this week. It’s amazing how 1 plant can produce so many! I really like this recipe. It’s super moist and flavorful. It’s uses regular flour 🙀 haha but everything in moderation is fine. Sometimes you just gotta have the real stuff like fluffy zucchini bread that white flour makes 😄 here’s the recipe. Happy Sunday! Zucchini Breads have basically been on repeat this week. It’s amazing how 1 plant can produce so many! I really like this recipe. It’s super moist and flavorful. It’s uses regular flour 🙀 haha but everything in moderation is fine. Sometimes you just gotta have the real stuff like fluffy zucchini bread that white flour makes 😄 here’s the recipe. Then I press it down into a square Pyrex and let set in freezer until hard enough to cut into pieces. The cacao butter gives it this creamy natural chocolate sweetness. I love bringing these on trips like now. Heading to Lake Winnipesaukee to take a boat to Sandy Island for the week. I added in organic chicken thighs and a verde sauce and cooked it for 15 minutes in the instapot. Stuffed the sweet potatoes 🍠 with the shredded chicken, black beans, salsa, guacamole, cashew cheese sauce, jalapeños, and cilantro.
