Here is one of our lovely CSA members Amanda, picking up the last basket of goodies for the summer season. Amanda really cares about eating good food. She drives 1 hour to meet me just off the interstate while I'm on my way to our Dickinson drop. Our health and well being is so worth an hour drive!! I'd do it to! I was going to takes lots of pictures seeing as it was our last drop of the year. This is the only one I managed. I always seem to get to talking with members and then I forget things. 😯There's always next year right?!

What it’s Wednesday already? It’s been a busy week so far, finally sitting down to enjoy my daily big salad 😋 school and activities started for the kids so I’m back to being the chauffeur! I skipped my salad yesterday and ate a huge slice of my raw cheesecake! Not feeling guilty AT ALL 😊 today on the menu was... tons of spinach, micro greens, different salad sprouts (kinda hard to see with all the toppings) carrots, snap peas, cucumbers, heirloom tomatoes, avocado, and hard boiled eggs with the everything but the bagel spice (I totally admit I’m so late to the game with that spice) Drizzled with olive oil & pink salt. It's impossible to go into the garden for 'just parsley'. I first graze all of the golden raspberries, find a late summer patch of strawberries ripe for the picking, walk by a couple golden Bartlett's, notice a plump fig ripe and ready. Oh look, Poblanos! Nestor's Summer Bounty Soup...the perfect way to enjoy fresh summer veggies and warm up on a chillier day like today. Chicken, grilled corn, carrots, potatoes, celery, onion, garlic, zucchini, summer squash, green beans, garlic and tomatoes in a fortifying chicken broth. 🌽🥕🍅🥔✨
Really trying to not let anything go to waste from the garden this year so we’ve been canning and freezing that which we’re not eating fresh. Lots of crushed tomatoes, sauce and salsa canned and pomodoro sauce and in the freezer. The last item on my tomato checklist is roasted tomato paste. Toss halved tomatoes (or leave whole if using cherry) with a little olive oil, salt and pepper. Roast until tomatoes well cooked and juices starting to caramelize. Cool on tray then purée in food processor with a splash of balsamic vinegar and garlic if desired. Then onto a parchment lined backing sheet I use my 1 oz cookie scoop (holds two tbsp) a put scoops of the paste onto the sheet. Freeze until hard then remove to freezer bags. Great for when you have recipes calling for just a few tbsp of tomato paste which is often the case with soup and stew recipes. Also it’s delicious spread on slices of baguette topped with fresh mozzarella and a dollop of pesto!
Are you all lemon cucumber fans or not? It seems with this particular kind of cuke people love or hate them. I’m in the love camp! And while I only had 2 lemon cuke plants this year, I got over 50 pounds of cucumbers from them. I can hardly believe it!!! Too bad they don’t store for like ever! Yesterday's surprise #blacktrumpet find cleaned and ready to dehydrate. I need a bigger jar! This will be my third haul that I've dehydrated this season, and we've even enjoyed a few meals this summer featuring the rich umami flavor of these gourmet #foresttreasures . They are everywhere...if you look closely. These dried mushrooms can be stored in an airtight container for a few years if they are dried well. Maybe more. When rehydrated, their flavor is intensified. They will be a wonderful reminder of #summersbounty for a handful of gourmet meals this coming winter.
