Chicken With Broccoli Stir Fry In Oyster Sauce.
500 GMs boneless chicken cut into 1 inch cubes. Mix together with 1 egg, 1 tsp heaped cornflour and deep fry. Do not over fry or you will land up with hard pieces of chicken. Remove on kitchen paper and keep aside.
1 big broccoli cut into medium florets
6 big garlic chopped
2 inch piece ginger chopped
8 green and red chillies mixed, kept whole
For the sauce-
1/4 cup oyster sauce
1/4 cup chicken stock
1 Tbsp light soya sauce
1 Tbsp toasted sesame oil
1 tsp sugar
1 tsp cornflour
1 tsp freshly crushed pepper
Mix together all the ingredients under sauce and keep aside. Now in a pan add some oil, when hot add the ginger and garlic, sauté for 2 minutes. Now add the broccoli and cook till almost done. Then add the cooked chicken, chillies along with the sauce and cook till the sauce thickens. Contains chicken meatballs, sautéed green beans with Malaysian sambal and chillies and crispy tofu with gluten free coating. Seasoned with chillies, fish sauce and worcheschire sauce. Yum!
Managed to actually get booked into lunchtime Zumba today and my whole body was soaked in sweet (I know gross!), but I felt really good (albeit achey) afterwards and mentally clear to tackle work tasks in the afternoon. Totally didn’t feel like cooking afterwards, but made a turkey stirfry with fresh garlic, ginger and Tamari. The great thing is there is enough for tomorrow’s lunch. Trying to fight negative feelings this week due to raging hormones.. so applying the Jessie 1% method - or small steps in right direction. veggie & noodle stirfry! (vegan + gluten-free)
delightfully chewy maifun-style rice noodles and flavorful, crisp-tender veggies star in this fresh and delicious stirfry. it comes together in under an hour, keeping your kitchen cool. weeknight dinner- solved.
veggie rice noodle stir-fry
eight oz. rice noodles, cooked to package directions
two Tbsp soy sauce
two tsp oyster sauce (or vegan alternative, I used @leekumkeeusa mushroom sauce)
chilli oil to taste
three cups thinly sliced cabbage (about half a small head)
one medium carrot, julienned
half an onion, thinly sliced
one small bunch kale, chopped into bite-sized pieces (preferably dinosaur kale)
two cloves garlic, thinly sliced
two Tbsp oil, divided
1. stir together soy sauce, oyster sauce, and chili oil in a small bowl.
2. heat two tsp oil in a wok over high heat. add the vegetables and sauté five minutes, until wilted and starting to brown. remove to a bowl.
3. add the garlic and remaining oil to wok and cook on medium heat until fragrant. add the sauce and noodles and toss to coat. add the vegetables back to the pan and toss until combined and warmed.
4. serve, passing extra chili oil tableside.
note: I used brown rice noodles, which are almost identical to conventional and pack a free serving of whole grains. feel free to add an egg for non-vegan.
