summer rolls or spring rolls are beautiful and healthy. they are packed with various colourful veggies that are complimentary to each other to fulfill your daily intake. the rice paper itself is an excellent substitute for breads. besides, you can choose the protein of your fave for the filling. last but not least, they are not deep-fried; once they are set, they are good to be eaten. this is another way to present the veggies with your fave dipping sauce.
so, i dare myself to make these summer rolls. i was so nerveous as this was the first time. they are not that neat and tidy; they still look ok though 😁
regarding the fillings, the options are endless. mine are as follows:
red bell pepper
yellow cherry tomato
baked tofu coated with seasoned gluten free flour

Flashback Friday to my spring rolls last night!! Spring rolls are a light refreshing dish on a hot summer night. I got the rice paper at my local grocery store. All you have to do is wet the rice paper, top it with your favorite fixings, roll that bad boy up, annnnd enjoy 😉. Below is what I put in mine .
I piece of Romain lettuce
Red bell peppers
Homemade peanut sauce (see last photo for recipe) .
