Homemade strawberry jam:
Frozen strawberries 🍓/
Dash maple syrup/
Simmer all until bubbling & appears to gelling. Along way smash strawberries./
Add some chia seeds, stir and let set a few mins./
Can be used warm on waffles. Letting it set in fridge overnight makes a more “set” jam mixture.
It is officially spring break - can I get an ahhhhhwww yeah!? We travel every other year, meaning that our off year is a staycation. This year is an on-year and we are headed up the Northern Coast to the Redwood Forest along the Oregon/California border. We cannot wait! It is one of our favorite places on earth.
On the years we do a staycation, I’m always searching like a madwoman for activities and excursions we can do together to not drive each other nuts but still feel like we had a good break from the normal routine of school and activities. Last year we did a staycation and got two of these cute garden books. We worked on a few of the activities inside and had so much fun!
The first two books are from Amazon and the third book we picked up from the library. All three are great for different reasons; we are getting ready to use the second book, Ready, Set, Grow! by Rebecca Spohn a lot as we prepare our vegetable garden this spring. The third book, Nature Projects for Every Season: Spring by Phyllis S Busch is great for teaching about the season of Spring. There are also a lot of really simple but fun activities to do on both rainy days and sunny days to enjoy Spring. And the first book is my very favorite: Gardening Lab for Kids by Renata Fossen Brown. There are 52 activities and/or experiments to choose from (and we have done tons of them- and they are easy!) including making your own bird feeders, painting pots, planting in old shoes, and creating a fairy garden.
I mentioned a few weeks back that my mom was coming to visit and that she LOVES to garden. Of course she came and spread some of her love and magic on our yard while she was here! My kids’ favorite activity was the fairy garden she helped them complete. Swipe to see my last picture for the finished product. Isn’t it the cutest thing?? It’s right outside our front door and makes me smile every time I walk by it. We got the idea from Gardening Lab for Kids, and then just went nuts. It was totally fun!
