At dinner though, I like to change it up. I baked salmon in the oven with some Dijon mustard on top. Sautéed some spiralized zoodles to go with it. ✌🏻

#tbt to that time three years ago when I bought a spiralizer and again just three days ago when I started using it more to create this cool summer dish that was definitely worth the wait 🙌🏻
Pistachio crusted tofu + kale chia zoodles! The tofu, interchangeable... the pistachios, highly encouraged... and the kale chia dressing —> brings it all together! Topped over more lightly crisped kale... dare I say, my kinda heaven?
The tofu [firm, any brand] pressed to remove water and sliced into 1/2 inch slices. I then marinated in a mixture of @majesticgarlic kale chia hummus [watered down slightly to make a sauce] for about 5 minutes. Then, coated with 1/2 cup finely processed pistachios mixed with 1 slice stale @daveskillerbread. I air fried mine for ~5 mins but you could also bake @400F for ~20 mins or even lightly pan fry.
This combo would also work GREAT with salmon or chicken and the sauce could be swapped for a peanut dressing/cashew mix. Go nuts! Eat cold or warm slightly... also pairs well with rosé 😉

You only need a couple of ingredients to whip up this tasty dish.
It's paleo, gluten, grain and dairy free....low calorie, low fat and amazingly delicious.
If you don't own a veggie spiralizer ....I highly recommend purchasing one ASAP! My favorite is @theinspiralizer which can be purchased on @amazon
Or you can simply julienne the zucchini or use a hand potato peeler (very carefully)
The best thing about getting @inspiralized is it's quick and easy to use, clean up is a breeze and the kids can help with the process (with adult supervision of course). INGREDIENTS: ✅2-3 large organic zucchini ✅1-2 tbsp of olive oil ✅2-3 tbsp pesto (I used store bought jarred pesto since I was in a hurry)
1️⃣Wash and pat dry the zucchini, leaving skin on spiralize, julienne or thinly peel into pasta like ribbons of deliciousness.
2️⃣In a large skillet add the olive oil and heat over medium high heat, add the zucchini and sautée for about 2-3 minutes, stirring constantly to ensure even cooking.
3️⃣Lower heat to low-medium flame and add in pesto, stir well until ZOODLES are evenly coated.
4️⃣Lastly, you may find a pool of liquid at the bottom of your pan. Drain any excess liquid that has been released by the zucchini before serving and enjoy with some fresh cracked black pepper or Parmesan cheese if desired.
Happy Summer Solstice! We host lots of pot lucks here at the farm, and I always try to use as many ingredients grown here as possible. This is a fresh and clean, salty and crunchy summer salad. It’s inspired by one of my favorite meals on a hot summer night, Bún chả, a Vietnamese dish usually featuring grilled pork and rice noodles. I spun noodles out of cucumbers with my spiralizer, and replaced the sweetener with apple juice. Link in profile.

Definitely was looking for a quick dinner tonight after a crazy day at work! Spiralized a sweet potato, sauteed the beauties in some coconut oil with red peppers, onion, corn, and some spinach. Topped with a quickly scrambled egg, some 🥑 on the side, and a drizzle of a chili-spiced tahini sauce (that I could totally just eat with a spoon, not going to lie... 😬). For my tahini sauce - I use @sprouts brand tahini (totally my favorite!), lime juice, a tiny bit of maple syrup, chili powder, cumin, onion powder, garlic powder, salt, pepper, and a little water to thin to the consistency I'm looking for. So easy and so delicious - love it on tacos too!
Look. At. This. Color. 🌈🌞 These radiant sweet potato noodles with garlic and kale were ah-mazing! Thank you @loveandlemons for the recipe!!! The recipe calls for pesto and cheese! Being a dairy-free girly ✌🏼I substituted pesto with @traderjoes vegan pesto and pecorino cheese with @followyourheart Parmesan!!! Spiralized vegetable noodles are just SO easy and #glutenfree 🙃 Plus, sweet potatoes are a great source of nutrients, packed with vitamins and minerals! I made this for dinner yesterday and then ate it for lunch and dinner today.... so clearly I’m obsessed! Give it a go! Also send spiralized recipes my way! I’m always looking for new ones! 😊
OMG this chickpea-bacon carbonara over sweet potato noodles by @inspiralized is soooo good. I love love love carbonara and order it whenever I go out for Italian but it is super rich and indulgent so this is a healthier version but you would never know it 😉 Not to mention it was pretty darn easy to put together and I already had everything at home. I love not having to run to the grocery store. I did sub Asiago for the Parm and it was still perfect and creamy. TRY IT!!!
Ensalada dulce súper fresca💦 puedes usarla de guarnición o hasta de snack si quieres algo diferente
Como guarnición para 3 personas:
✔️2 pepinos en noodles🥒(puedes rallarlo o hacer tiritas súper delgadas)
✔️1/2 de mango en cubitos
✔️5 arándanos s/azúcar en mitades
✔️1/4 de taza de quinoa fría y cocida
✔️ 1 cda de semillas de girasol
➰ Para aderezar: 1 cdta aceite de oliva, 1/2 cda vinagre balsámico, un pedacito de jengibre ralladito y el jugo de 1/2 limón amarillo🍋.
👀Si la usas de guarnición ten en cuenta que debes moderar el consumo de otro tipo de carbohidratos (tortilla, pasta, arroz) ya que la quinoa y las frutas ya te estan aportando un poco
Lately i'm SO in love with Thai food! I mean... it's unbelievable! Now that i'm cutting it's not an option for me to go out and eat it, so i'm trying to make a lot of Thai salades myself. This one was actually REALLY good & it looks pretty as well. Win-win!
For two plates:
Spiralize the cucumber and five carrots. These are your noodles. Place them on the bottom of your plates. Now cut one red onion in rings and divide over the two plates. (I'm slightly intolerant for raw onions so i bake'm first). Cut some red cabbage, put in a large bowl and sprinkle apple vinegar over it. Let it marinate for a while. Meanwhile heat up a large pan with a few sprays of olive oil. Cover two turkey filets with 7g honey (each), paprika, curry, chicken herbs, cilantro, salt and pepper. Make sure they're ready and cut them into small slices. Add to your plates, together with the marinated red cabbage. As a finishing touch, use some left-over greek-yoghurt-curry dressing (i only used one TEAspoon for my entire plate!!!), sprinkle some apple vinegar and sesame seeds on top and some freshly cut cilantro as well.
