Indian food is my favorite food. Not just because it’s spicy. A level of thoughtfulness goes into each dish; the way it is prepared, the ingredients that are used. A harmony of spices, all so different and assertive in their own way. It’s remarkable.

🍲 “Sancocho Nueva”
Yucca, tarro, pumpkin, sweet potato, pickled green banana, charred baby corn, stock blanched cabbage, sofrito consommé.
This was the second course from our “La Cocina 2” popup. This dish was ambitious to say the least. When you attempt to modernize a traditional staple of Puerto Rico like the hearty stew they call sancocho, you must tread lightly and with respect. A lot of effort went into this dish. @isecorrea and @gerardoacolon worked on the broth for three days to get it right. I gave @ras_bj_the_chef the tedious task of cutting all the root vegetables the same size and cooking them in different preparations. I blanched the green bananas in stock and then cut them while they were hot and suberged them in a pickling liquid. I also brought the baby corn back all the way from @specialtyproduce in San Diego, just for this dish, as I thought it would really take it to the next level. We even used a tiny cookie cutter to cut red cabbage circles for garnish, as we thought they would make sense as something that might end up in a hearty soup like this.
We plated it with care, and poured the steaming hot broth table-side for our guests to enjoy.
When it was all said and done, it looked simple, but all the work we put into this dish came through in a depth of flavor that hopefully did justice to the classic . #spicepopup#truecooks

was equally good.
🤩🤩 White rice ✔️✔️and homemade achar ✔️✔️✔️further added to the deliciousness of the Haleem and nihari. Now comes the imli sharbat✔️✔️, I had never tried imli sharbat before nor had I ever thought that I'd like it but it was quite amazing .

Okay I wasn’t going to share this at first and I probably should have taken a picture before I demolished this, but this is one of the best lunches I’ve had in a while and it’s under 300 calories!! 😱 If you’re wondering what the mystery meat is, it’s a @morningstarfarms spicy black bean burger cut up, broccoli and I used a little bit of mango habanero bbq sauce from @publix and mixed this up. SO GOOD. The quickest, easiest and most delicious lunch. 😋
Throwback to last night dinner at my favorite Sichuan restaurant in Singapore! For those who don't know, Sichuan dishes are famous for their numbing spiciness. Literally numbing your tongue but still so robust with flavor!
