Spicy beef and vegetables! 🌶
So I was on my way to making spag bowl and then I thought why do you always make the same few things when it comes to mince. Just try something new, see if it turns out. And boy oh boy did it turn out! 🤩
This one is super quick, packed full of veggies and a mid week favourite for sureeee!
500g lean mince
1 onion, finely chopped
2 cloves garlic, minced
1 red chilli, finely chopped
2cm piece ginger, grated
1 zucchini, grated
5 mushrooms, finely chopped
Handful green beans, ends removed and chopped in half
1 red capsicum
Bunch of basil leaves (15)
2 tbsp Soy sauce
1 tsp Oyster sauce
1/2 tsp fennel seeds
1 tsp cayenne pepper
Grab a wok, heat 2 tbsp sesame oil and throw in your onion, garlic, ginger and chilli. Let cook until onion goes soft, 2-3 mins.
Add zucchini and mushrooms and continue to cook for a further 3-4minutes.
Add mince, ensuring to break it up in the pan.
Add spices, fennel seeds, cayenne pepper, S&P and give it a good stir.
Once meat is almost cooked through add beans, capsicum and basil.
Let that cook for about 2 minutes then add oyster and soy sauce. Give it a last stir and your good to go!
Serve with wild rice or quinoa.
