Jujeh Kabab(grilled chicken)is an Iranian dish that consists of grilled chunks of chicken which are sometimes with bone and other times without bone.This is one of the most common and popular dishes of Iran.It is common to marinate the chunks in minced onion, lemon juice and sometimes saffron. Tahchin also known as Persian Baked Rice Cake, is an Iranian rice cake primarily consisting of rice, yogurt, saffron. Some versions of the dish are more elaborate, folding in chicken, vegetables, fish, or red meat. Tahchin is composed of two different parts: The thin Tahdig part which includes the chicken fillets, saffron, and other ingredients at the bottom of the cooking pot and the second part which is the white rice. This delicious spread is made by activating organic almonds, organic cashew nuts and organic hazelnuts. Activating these nuts triggers the sprouting process and makes them easier to digest. For grinding - coconut 2 pieces, ginger 1inch, green chillies -2, coriander leaves one handfull, squeeze half lemon in mixie just to preserve the green color
In a kadai heat oil, splutter mustard, saute onion finely chopped - 1, tomato small -1, add 1/2 cup vegetables of your choice,
Add ground paste, fry for a min, add turmeric powder, salt to taste. Add 2 1/2cups of water. When water boils add the wheat slowly stirring and allow it to.cook for 10 mins in simmer. Serve hot with adding 1tsp ghee and any side dish chutney or thokku.
