I boiled purple cabbage and used the water to make the purple rice (puréed a little of the cabbage and stirred it in to sneak some veg in the kids too), boiled beetroot for the pink rice (with purée too) and tumeric for the yellow rice.

Impressed! First lot of grain free AIP plantain waffles! Different tasting, but tasty none the less. This was my very first time using plantain. Luckily @thepaleomom has a YouTube video on how to prepare them. This used 1 green, 2 yellow with black spots. I don't have a waffle iron 😮, and don't intend to get one. The silicon moulds worked well too!
