Ok WOW. I’m on a baker’s high! I’m in loaf! So beautiful and edible! I caught wild yeasts in a starter, put them to WORK, and with some instruction from @deethetree and @robynn.olson made THIS!! Race: L: Bottled Water vs. R: Tap Water
Unfortunately the tap water in my area has chloramine in it which does not evaporate, unlike chlorine by itself which will evaporate if left standing.
Chloramine is awful to start fermentations with. It usually results in mold as the chemicals inhibit the beneficial yeast and bacteria I want to cultivate, but somehow allow nastier furry grey fungi to flourish.
In this race, I was surprised that the chloramine starter almost kept up, but then seemed to start lagging near the end. I guess for established starters the effect isn't too pronounced but still has an impact. But if you're trying to start a culture from scratch, using tap water with chloramine likely won't work.
I've read that ascorbic acid can neutralize chloramine, as can campden tablets which have sulphur in them. I'll try that as a later to see what happens.
