A rainy rainy day today and this simple "holiday in a bowl" kind of soup . . . Pumpkin and Apple soup with hint of cinnamon . . . Simple, healthy and soulful meal option.
1 small Pumpkin grated or diced
1 medium Apple peeled and roughly chopped
3-4 Garlic cloves
1/2 tsp Cinnamon powder
1/2 tsp Only Soup seasoning
Saute the garlic and pumpkin in 1 Tsp ghee until the pumpkin is almost caramelized (roughly 10 mins). In a blender add the freshly chopped apples and cooked pumpkin and blend into a fine puree adding water of necessary.
Transfer the puree into a pot and add in a cup of water to it along with the salt, cinnamon powder and the soup seasoning.
Bring to a boil and serve hot.
Lemon orzo soup. Onions, garlic, celery, carrots, veggie broth, 1/2 cup orzo, spinach, kale and mushrooms. I added a mix of almond milk and coconut butter because I didn’t have any coconut milk. 😂 it came out more stew like after simmering for a while, but it was still really tasty.
