Lets have some fun this Sunday when the Seahawks vs 49ers kickoff at 1:05pm. Brimstone will open at 12:30pm and we hope to see you all there! Join us during the game and be entered into our raffle with a drawing at the end of each quarter. Must be present to win. All guests dining with us during the game gets a ticket. Sunday brunch, smoked trout with rösti and pickled beets.
Making rösti is really simple, just peel and grate a bunch of potatoes. After the potatoes are grated, I add them to a big bowl of water to prevent them from browning and to soak out the potato starch.
Heat grapeseed oil in a heavy skillet and once the oil is ready, squeeze out the water from a handful of grated potato and pan fry. Sprinkle with a bit of sea salt and cook one side until the uncooked side starts to look translucent. Once ready, flip it on your pan (just make sure it’s not sticking anywhere and it will stay together before attempting the flip). If you’re not comfortable flipping it in one go, then slide the rösti onto a dinner plate. Place another plate ontop and flip it onto the new plate then slide it back onto the pan. Now cook the other side until it’s golden brown.
We love it with smoked fish, sour cream, red onions and pickled capers, beets or dills.
