homemade gingerbread to cure what ails ya 🤕 food is my literal joy + medicine and am so happy i got my bum in the kitchen to bake this morning before my tub/toenail snafu 🤦🏼‍♀️ having the smell of this bread and the ability to give myself a beautiful breakfast was a lifesaver.

this bread is based on the @tanyazuckerbrot + @f_factor lemon zucchini 🍋 bread. love the fiber + protein content and was CRAVING a warm baked good. here is the recipe for this easy gingerbread:

dry ingredients mixed in bowl 1:
1 cup coconut flour
4 scoops @f_factor 20/20 vanilla protein
3 tsp baking powder
2 tsp cinnamon
1 tsp nutmeg
1 tsp ground ginger
1/4 tsp pink salt
.
wet ingredients mixed in bowl 2:
4 egg whites
2 tsp vanilla
3 tbsp blackstrap molasses
1/2 cup greek yogurt (plain)
2 tbsp MCT oil
.
other ingredients:
1 cup unsweetened almond milk
1.5 cups grated + drained zucchini and/or summer squash
.
directions:
1. preheat oven 425 and prepare a loaf pan with parchment for baking.
2. add 1/3 of the dry mixture into the bowl of wet ingredients and mix. add 1/3 cup of almond milk to bowl of wet ingredients and mix. repeat two more times until all dry mix and almond milk are blended smooth.
3. let mixture rest 10 minutes.
4. fold in the grated zucchini and place in prepared loaf pan.
5. bake at 425 for 20 minutes. after 20 minutes turn the oven to 350 and bake an additional 40-45 minutes, or until a toothpick comes out clean.
6. allow to cool on a metal rack and slice. this makes 8 servings.

i had a thick slice with @siggisdairy yogurt and blueberries + loved it! ate this yummy breakfast by the fire 🔥 and keeping that foot of mine elevated for a bit.

Not feeling like leaving home with this weather?? I don’t know about you, but I love to eat comfort foods on snow days, it’s just something we all do, right? 🙏🏻
Although we’ll have some cookies (gluten free of course!) baking in the oven, I’ll be sure to make a healthy veggie soup & a cauliflower pizza too. So that I don’t over do it on the “treats,” I’ll also make sure to get my water in (70 ounces!) & lots of herbal tea in between to keep satisfied. It’s so easy to get off track on a day like today, so I try to stay as mindful as possible. 🍵 
These tips are not only for a snow day, but for most days, especially with the holiday season upon us! Speaking of the holidays....I just had a client call & we literally went through her schedule of events for the next few weeks, coming up with a plan of action for each party and weekend events. ✨ It’s SO IMPORTANT to have a plan, as it makes all the difference in the world to achieving your goals. ❤️ #ZoHealthy

My whole dinner tonight was cooked in my air fryer! Brussels sprouts  and asparagus sprayed with white truffle oil and sprinkled with pink sea salt and some parmesan cheese. INGREDIENTS
1 can pure canned pumpkin

1/2 cup dark chocolate chips 
INSTRUCTIONS

2. Add all ingredients minus chocolate chips to a bowl
3. Mix & combined until smooth
4. Add chocolate chips and gold in
5. Pre-pare 8x8 baking dish with coconut oil or olive oil on sides

My favorite afternoon snack plate!! 💕 I brought everything from home, and I don’t think I’m going to get the rest of the Smokey Mesquite almonds from Trader Joe’s back. My mom is now obsessed with them 😂

Tonight I made a coconut milk turmeric, ginger, chili, garlic sauce and poached some fish in it. I sautéed broccoli, daikon and courgette in the same spices and for good measure I also made Savoy cabbage and a side salad. 
I then transferred the sautéed broccoli to the fish dish and served it in a deep dish platter..
This is a quick, yummy and flavourful meal. Hubby approved 😍

FIBER-PACKED FALL PUMPKIN CHILI RECIPE: 👇🏻
➖1 pound grass-fed ground beef (or chickpeas or tofu for vegan)
➖1 (14.5 oz) can crushed tomatoes
➖1 Cup, or 8oz canned pumpkin (may add more if desired)
➖1 15oz can Kidney beans
➖1/2 medium onion, chopped
➖1 small green pepper, chopped
➖2 garlic clove, minced
➖2-3 Tbl no-salt chili powder
➖1/2 tsp. Pumpkin pie spice
➖2 tsp. tomato paste
➖1 tablespoon Avocado oil
➖2 tsp. Acacia Fiber powder {extra fiber + thickener @sarifoodscompany } optional
➖Pink salt & pepper to taste
➖1/2 cup broth *optional depending on desired consistency*
➖My Toppings: cilantro, #dairyfree jalapeno crema

DO IT: 👇🏻
1️⃣Sauté the onion and green pepper in oil in a large pot until tender. Add garlic; cook 1 minute longer.
2️⃣Crumble beef into pot and break-up. About halfway, add the dry seasonings: chili powder, pumpkin pie spice, pink salt & pepper, and continue to cook until the beef is no longer pink.
3️⃣Stir in the pumpkin, tomatoes, tomato paste. Cover and cook on medium-low for 25-30 mins. May add broth if necessary.
*️⃣Serve in a bowl, OR sweet potato boat if you’re feeling fancy, 💁🏻‍♀️ Top with all your favorite chili toppings.

It becomes a much more filling meal when I add in the veg, the fibre and the seasoning. I eat real food in a good quantities and pay special attention to my fibre intake. 
I had the tuna salad on 4 @ggfiber crackers, with large romaine lettuce leafs, carrots and celery. It’s a quick and filling lunch. 2 cups frozen lacinato kale
1/2 cup frozen wild blueberries
1/4 cup frozen raspberries
2 scoops @f_factor 20/20 vanilla (that stands for 20 grams of protein + 20 grams of fiber)

I was CRAVING a good 🍌muffin recipe and of course I stumbled upon an amazing one via the brilliant @healthywithnedi 👩🏼‍🍳which I modified a bit based on what I had on hand! Utilized my favorite @f_factor 20/20 vanilla protein powder as well as the vanilla collagen from @ancientnutrition ! Here’s the recipe (makes 6 muffins):
1 ripe banana, mashed
2 whole eggs, beaten
1 egg white, beaten
2 tbsp @choczero high fiber syrup
1 tbsp coconut oil, melted
1 tsp vanilla extract
2 tbsp 0% fat plain Greek yogurt
1 tsp baking powder
1 tsp cinnamon
1/2 cup @bobsredmill almond flour
1 scoop @f_factor 20/20 vanilla protein powder 
1.5 scoops @ancientnutrition vanilla collagen 
pinch of sea salt
Handful @lilys_sweets_chocolate dark chocolate chips 
1. Preheat oven to 350, spray 6 muffins tins with non stick spray. 
2. Mix all wet ingredients except for Greek yogurt together. 
3. In separate bowl, mix Greek yogurt with baking powder, let sit for a minute until it rises, then mix in with other wet ingredients. 
4. Fold in all dry ingredients to the wet. 
5. Distribute amongst 6 tins and sprinkle chocolate chips on top. 
6. Bake for 20 minutes & enjoy!

Roasted root veg - I am a little under the pump as I got lost in a painting and forgot I had to have dinner served up by 630pm- 🙈 here is what I am making, and here are a few tips for when time is crunched...
Pop the deep baking dish in to the oven and warm it up whilst you pre-heat the oven. Two things happen: it’s hot and does not need to get up to heat to then bake the veggies and second, the oil hits it and spreads a lot easier over the veggies thus you use less oil. Definitely chop the aubergine in to smaller bite sized portions and salt it to sweat it whilst you chop the other veg. Don’t skip this step. Then use a clean kitchen cloth to wipe off the released water and salt. 
I layered: aubergine, courgette-similarly chopped a lot smaller than usual, white onion, red onion, red pepper, garlic (3 large cloves chopped) carrots, and daikon. I mixed ACV, olive oil, pepper, fresh basil through the veg. 
Daikon is a fantastic versatile veggie - you can enjoy it raw, sautéed or baked. It is purported to help ease water retention. In any event once I find it at the market it becomes a winter staple. I don’t normally use carrots in a dish like this but I am all for winging it tonight. 
Once the veggies have baked for 45 minutes I will add a pork loin and bake it all together for about 35 minutes. I have marinated the pork loin in apple cider vinegar, ginger, turmeric,black pepper, fresh finely diced chili, coriander and oregano for sweetness. 
I will serve with a green chopped salad: celery, cucumber, chopped butter lettuce, fresh dill. Xx

I love this meal because it can be ready within 10 minutes, it tastes great and its a great balanced meal. For protein I used @traderjoes soy chorizo (its so flavorful), red cabbage and lettuce, guac, and topped off with some salsa💃🏼 For an even lower calorie and carb meal, try swapping the tortillas with lettuce wraps! It’s #meatlessmonday and I have an unreal recipe to help you go meatless tonight! This is @eatbanza Sun-dried Tomato Pesto Spinach and Mushroom Pasta Recipe and it’s a 10/10. This pasta has 25g protein and 13g of fibre for about 2 servings. To put this in perspective, adults need 0.8g of protein per 1 kg of body weight each day. For example, if you weigh 68kg (150lbs), then you would need approximately 55g of protein per day. Canadian women need about 25g of fibre per day and men need about 38g. For 2 servings of this pasta, you get a significant amount of protein and fibre to help meet your daily requirements and a whole lot of enjoyment!
