It’s been an eventful night and I can’t wait to crawl back into bed ...4hours to go until 8am 😓😬... The other evening, I tried out Lettuce Slaw, using mayo-maize. To the slaw, I added toasted sesame seeds 😋 and roasted chickpeas. Then, prepared butternut slices sautéed in that ‘ Free From ‘ basil pesto I’ve grown to love . Enjoyed those vegetables with avocado slices. I dislike the traditional coleslaw but I was open to trying out this lettuce slaw. Toasted sesame seeds always enhance the flavor of vegetables for myself. This is the first slaw I’ve eaten ( and enjoyed ) in a LONG time...
Whenever I am in Edinburgh, and need to eat, my favourite go to place is Bubba Q on High Street (Royal Mile). The food is amazing and the milkshakes are pretty fantastic.

Meatloaf. It is the answer.
Quick. Easy. It will have you yelling
“MOM, THE MEATLOAF!!!! WE WANT IT NOW!” before you know it.
This is a mix of beef and pork, with added chopped carrots, shallots, and green onions. Shape into loaf, bake for an hour at 350.
Served a’top apples and slaw.
