Happy Fishy Friday! Here’s a recipe for a Norwegian Salmon Poke Bowl 🐟 which is a traditional dish from Hawaii that brings out the delicious delicate flavour of and texture raw salmon. ✨
Serves 2 .
✨
Prep time 10 minutes .
✨
Cook time 18-20 minutes .
✨
Ingredients .✨
200g Norwegian salmon fillet, skinned and cut into cubes
1½ tbsp soy sauce
2tsp sesame oil
2 spring onions, sliced
120g sushi rice
1 tbsp rice wine vinegar
1 tsp black sesame seeds
1 tsp white sesame seeds
1 avocado, skinned and sliced
½ sheet nori seaweed, cut in strips
1 lime, halved .
✨
Method ✨
1. Combine the soy sauce, sesame oil and spring onions and stir into the salmon cubes.  Set aside whilst cooking the rice.
2. Cook the rice according to the pack instructions, drain and stir through rice wine vinegar.
3. Lightly toast both sesame seeds in a small pan, moving them round the pan until they begin to shine and the white ones are golden.
4. Spoon the rice into bowls, top with the salmon mixture, sprinkle over the seeds and add the avocado and nori strips to garnish.  Squeeze over the lime just before eating. .

Cook’s Tip
The salmon requires only 10 minutes marinating before it takes on the flavours and it is best eaten fresh, but it can be left covered in the fridge for up to a day. ✨
Note
Norwegian farmed salmon can safely be used raw to make sushi and sashimi without prior freezing, as highlighted by NIFES’ Nutrition and Seafood Research.

Fillet of Norwegian Cod, Clams and vegetable hearts , Orange and Basil Dressing 🐟 by @hulstone ✨
Ingredients ✨
4x 180g Norwegian Cod fillet portion from a 5kg Fish
1 straight cucumber
2 plum tomatoes
1 beef tomato
2 yellow or heritage variety tomatoes
4 button onions
3 spring onions preferably red ones
15 clams
150ml white wine
2 oranges
50ml fresh orange juice
100ml olive oil
Caster sugar to taste
Salt to taste
5 basil leaves large
Selection of micro basils
Buttervilla micro red wood sorrel
Wood sorrel green
4 borage flowers
Rocket flowers ✨
Method ✨
Ensure that the Cod is free from scales and bones, trim to shape and season.
✨
Cut the tomatoes into quarters and remove carefully the seed sack, set aside, cut the cucumber into 1 ½ inch pieces and using an apple corer deseed, retain the seeds. Peel and cut in half the button onions, separate the layers of onion and blanch quickly in salted water. Trim and blanch the spring onions and refresh.

In a griddle pan, place the spring onions and cook for a few minutes to gain grill marks, season. Place the Cod skin side down in a non stick pan and cook for 4/5 minutes then flip and cook for a further 2 minutes allow to finish cooking in the pan. Place the onion hearts into the griddle pan just to reheat.

In a hot pan place the clams and cover and add a glass of white wine to steam, cover and quickly cook, remove the clams from the shell and set aside. To make the sauce bring the orange juice to the boil and whisk in the olive oil and season with the salt and sugar. Segment the orange and cut into half each segment.

To serve, arrange the tomato hearts and the grilled vegetables around the plate, warm the cucumber in a pan and toss with a little olive oil. add the clams and julienne of basil to the sauce and spoon around, Finish with the remaining vegetables and herbs and flowers, serve immediately.

@MichelRouxJr ‘s Norwegian Haddock Baked with Ginger and Coriander, Steamed Basmati Rice ✨

Quick and easy, great flavours to liven up a delicate healthy piece of white fish. ✨

Serves 2 ✨ 
2 fillets of Norwegian haddock - 160g each
160g Basmati rice
1 tsp salt
1 bay leaf
1 cinnamon stick
1 bunch coriander
1 piece ginger - 4 cm appx
1 clove garlic
1 tbsp light soy sauce
Juice of 1 lime
1 tbsp vegetable oil
1 tbsp sesame oil
1 large shallot 
Rinse the rice then place in a pan; add salt, bay and cinnamon.
Pour over 260ml water, bring to the boil then turn down to a very low simmer before covering with a tight-fitting lid. Cook for 15mins then take off the heat, leave undisturbed for 5 mins. Then it should be ready.
Cut the stalks off the coriander and leave to one side, then chop the leaves. Grate the ginger and garlic, add to the chopped coriander leaves then mix in the soy, lime and oils to make a dressing.
Take 2 sheets of foil or baking parchment approx. 20x30cm, place the fillets in the centre and sprinkle over the very finely sliced shallot and some chopped coriander stalks.
Fold over the foil to make a tightly closed parcel. Place in a hot oven at 200°C for 8 mins.
Once cooked, open the parcel and either eat straight out of the parcel or transfer the fillets to a plate. Serve with the fluffed up rice drizzled with dressing.

Day 2 #seafoodweek recipe. Michel Roux Jr’s Roast Norwegian Cod with Leeks and Mashed Potatoes, Parsley Coulis
✨
This vibrant and nutritious green parsley sauce elevates this simple dish into something really special. ✨
Serves 2 ✨
2 large Norwegian cod portions - 180g each
2 large potatoes
1 medium leek (white only)
1 tbsp Dijon mustard
8 tbsp chopped parsley
80ml milk
4 tbsp olive oil
Salt, pepper .
✨
• Peel the potatoes and then boil them in salted water until cooked. Drain and mash the potatoes, adding the milk and 2 tbsp of oil whilst you do so. Season to taste.
• Slice the leeks into 1cm rounds, wash and then cook in salted boiling water for 5 mins until tender. Drain well but make sure to keep the water, some of which you can then add to the mash.
• Take 120ml of the remaining leek cooking water and bring to boil, adding the parsley and mustard. Take the mixture off the heat and blitz in a food processor or with a stick blender until smooth.
• Dust the fish in the flour, then pan fry in a non-stick pan with the remaining oil, skin side down. Once the fish is golden, turn over and turn down the heat. Continue to cook the fish for 3-4 mins, depending on the thickness of the fish.
• Serve the cod with a good spoonful of leek mash and potatoes

Happy Friday! Mi-Cuit Norwegian Fjord Trout, Grilled Courgettes and Sauce Vierge 🐟 by Daniel Galmiche
✨
Cooking in a water bath reveals the true flavour of Fjord Trout and it is just superb. Served with a simple courgette salad and punchy sauce vierge, this is an elegant and popular dish ✨
Serves 4
4 x 140g Norwegian Fjord Trout paves
Olive oil
2 large courgettes, ribbonned
Sea salt and freshly ground black pepper
sauce vierge (makes 150ml)
4 large tbsp extra virgin oil
1 shallot, chopped
1 tomato deseeded and diced
1 tbsp of good balsamic vinegar
juice of half a lime
1 handful of flat leaf parsley, finely chopped
Method
Sauce Vierge:
• Pour the oil into a small saucepan and briefly warm over a low heat for about 30 seconds
• Add the shallot and cook for 2 minutes, remove from heat and gently stir through the tomato. Add vinegar and lime juice, and just before serving stir through the parsley
Fjord Trout:
• Brush each Fjord Trout pave with oil and pepper. Wrap in cling film and tie up both ends, then cook in a water bath at 60oC for 5-6 minutes
• While the Fjord Trout is cooking, grill the courgette ribbons in olive oil, salt and pepper
• Remove from the water batch and cut one side of the film, pat dry, brush with oil and pepper, then pan-fry on the skin only in a non-stick pan
• After 2-3 minutes, when golden brown, serve pink in the middle and you will see those lovely flakes just sliding through the fork pressure
• Drizzle the with the sauce vierge and serve with grilled courgettes ✨

Textures are important in this dish, the trick is to keep the flesh moist and undercooked using a water bath, and using a smoking hot pan to ensure the skin is nice and crispy

Pocherd sejfilé marinerad i lime och saltlake serveras med ägg- och spenatsås samt dill, smör- och paprikastompad mandelpotatis och vitkålssallad med saltgurka. 
Recept 6 portioner 
7-800 g sejfilé 
till saltlag
raspet från en tvättad lime
1 pressad lime
2 l vatten
1 dl grovt salt
3 tsk socker 
10 svartpepparkorn
1 lagerblad

Koka upp alla ingredienser till lagen och låt den kallna.
Skölj sejfiléerna  och lägg dem i lagen över natten. Häll av lagen.
Smöra en plateau eller kastrull och strö lite finhackade lök på botten.
Vik eller rulla filéerna och lägg dem mycket tätt i plateaun eller kastrullen. Slå på lite vatten och vitt vin. Det ska vara så lite vätska som möjligt så att det knappt täcker fisken (fisken vätskar sig också).
Smöra ett smörpapper och lägg över fisken och sätt på ett lock.
Starta pocheringen (sjudningen) på spisen och ställ sedan in kastrullen i 120°C ugn och låt pochera ca 15 minuter lite beroende på hur stora och tjocka filéerna är. Kolla med digitaltermometer (ställ in den på 48°C). Det går att pochera färdigt på spisen utan att använda ugn (var då försiktig så att det inte kokar)!! Tänk på att innertemperaturen på fisken inte bör överstiga 48°C.

30 g margarin
½ dl vetemjöl (ca 30 g)
4 standardmjölk
1 dl grädde
3 hackade hårdkokta ägg
½ finhackad fräst gul lök
1 dl förvälld hackad bladspenat
salt och peppar 
Gör en vit bottenredning av margarin och mjöl
Tillsätt den uppkokta mjölken och grädden under kraftig vispning.
Låt koka ca 10 minuter (tänk på att den bränner lätt).
Salta och peppra och tillsätt lök, hackade ägg och spenat.
