We should just compare with ourselves & not with others, if we look back where we started from to where we are now, there should be amazing progress & lots of small wins to celebrate! We just need to step back & realise they do exist! Just embrace the process, be grateful, have faith & put effort & energy to what you love & you’ll see, great things will happen! 😛

Μιας κι η χρονιά φτάνει στο τέλος της νίωθω πολύ χαρούμενη & ευγνώμων για όλα αυτά τα μικρά πράγματα που έχω καταφέρει φέτος, που δεν είχα καν φανταστεί, με πολύ δουλειά, αφοσίωση, συνέπεια & πίστη!
Δεν είναι τυχαίο που επέλεξα αυτό το θέμα για την ομιλία μου την περασμένη εβδομάδα (άλλο ένα πολύ σημαντικό πράγμα που μου συνέβη πριν φύγει αυτή η χρονιά!). Την επόμενη φορά που θα νίωσεις απογοήτευση, να θυμάσαι, μη σε συγκρίνεις με κανέναν άλλον παρά μόνο με τον ίδιο σου τον εαυτό, αν κοιτάξεις πίσω, την πορεία σου από εκεί που ξεκίνησες ως εκεί που βρίσκεσαι θα αντιληφθείς τη μεγάλη πρόοδο που σίγουρα έχεις κάνει και όλες τις μικρές «νίκες» για τις οποίες θα έπρεπε να νιώθεις περήφανος! Απλώς αγκάλιασε τη διαδρομή, έχει πίστη, επιμονή & δώσε όλη σου την ενέργεια σ´αυτό που αγαπάς, μόνο σπουδαία πράγματα θα συμβούν! 😘
Day 78 - Breakfast
Breakfast in bed 🥳. Went for the classic @alpro coconut yoghurt (5 table spoons) with oats and @bonnemaman_us jam for breakfast.
I have found over the years that eating breakfast seems to make me way more hungry throughout the day so I end up eating way more than I should. It’s almost like breakfast kick starts my metabolism and then all I want is food. I am going to try having a bigger breakfast over the next few days to see it that helps.

Recovery has taught me to look at things from a different perspective. I’m only human and struggle with bad body image on certain days, but then looking back on the time when I was much skinnier than I am now simply makes me proud of how far I’ve come. I’m the misery I was in back then, I only had 2 choices - recovery, or spending the rest of my life in and out of hospital, friendless, unable to do anything else with my life other than staying skinny. Yeah, I’m much thicc-er now (lol) than I was at one point in my life, but I’m loving it because the extra weight has meant the difference between being obsessed with food, working out for 4 hours a day, being alone all the time and potentially spending the rest of my life in misery, and feeling strong and confident, studying my favourite subject at university, loving food without thinking about it all the time, being more social than ever, and so many other positive things that have happened to me because of recovery. I guess what I’m trying to say with this little ramble is that recovery is very much possible, and the difficulties of it are worth the end result! In other news, here’s a nourish bowl I had yesterday (with a lot of tahini drizzled on top after the photo, of course). Hope you’re all having a great week so far! 💚

Crispy oh so good Kale chips! 💚 🍟
I said to the kids, 'I thought I'd make kale chips', a big, 'YES'! Followed 🤩
They are the best, quickest and healthiest snack around. If you haven't had them for awhile (as we hadn't) or perhaps haven't tried them with your family... They go SO crispy and with a bit of himalayan or sea salt #kidslovethem Even for #fussyeaters#givethemago

🌿 1 to 2 bunches Kale
🌿 Olive Oil
🌿 Sea salt
🌿 Preheat oven to 160 degrees or 140 fan forced
🌿 Remove Kale from stalk, leaving the greens in large bite sized pieces & scatter over a baking tray. 🌿 Sprinkle over the kale a little olive oil & sea salt. Rub / massage the oil and salt gently onto the kale leaves until all well covered.
🌿 Place in the oven & bake for 10 – 15 minutes or until they turn a golden brown. Keep an 👁 on them as they burn quickly. In Joy! ✅ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
And be quick - they won't last long! 😋 ⠀⠀⠀⠀⠀⠀⠀⠀⠀
For added flavour sprinkle with a little crushed garlic or spice, such as curry or cumin after rubbing on the olive oil.

I've been really loving French toast lately. It's super easy and quick and tastes delishious😋 this time I cut my bread into 4 squares before dipping and frying them, and served with coconut yogurt and warmed raspberries🙌
To make the French toast: mix an egg with cinnamon and coconut milk, and dip your bread in the mixture. Fry on a non-stick pan with a little butter until golden and crispy.
Also on another note, today's the day, we're going to cut down our Christmas tree🎄 today. I'm so excited to decorate it and get the festive vibes going😀
