Shiitake + Brussel sprout greens 🤗. The greens from so many veggies are powerhouses and superfoods. Shiitake have all essential amino acids. It’s one of the few vitamin D containing foods. The leaves from brussels sprouts are from one of the healthiest foods around so don’t discard. Packed full nutrients and one of the few containing vitamin K.

🍄 If you know me, then you know that I’m mad about mushrooms. Fungi is fascinating! If you think mushrooms are only good for topping off your pizza, then think again. Now we’ve all heard the cautionary tales about the poisonous potential of mushrooms but don’t let that put you off medicinal mushrooms. The ancient Egyptians believed eating mushrooms brought long life and they’ve been used for thousands of years in cultures all around the world. Now, modern scientists are discovering some fascinating healing properties of mushrooms! The list of health benefits is impressive and each mushroom is unique and provides its own health advantages.
There’s so many mushrooms to explore but let me tell you about some of my favourites...
For over 2000 years it has been heralded as the secret to keeping people healthy and active way into their golden years so it’s no surprise it is referred to as the mushroom of immortality! Shown to have potential lipid-lowering, antioxidant, blood sugar stabilising and immune-stimulating effects. Also the calming properties of this mushroom have shown to help with sleep so a good one if you’re struggling to nod off!
Bad case of brain fog? Try some lion’s mane for mental clarity! Immune-strengthening and packed with antioxidants, this mushroom is special due to it fostering the production of the bioprotein nerve growth factor and myelin which are crucial for brain health.
This popular mushroom goes beyond just jazzing up a stir-fry. It has shown to potentially help with lowering cholesterol, heart health and maintaining healthy blood pressure and circulation.
Turkey tail contains a compound calls polysaccharide-K that stimulates the immune system. PSK is so effective that it’s an approved anticancer prescription drug in Japan. Turkey tail can help with immune support of people receiving chemo and has shown to improve survival rate of people with certain cancers.

We're keeping it real guys! Dear husband had all planned for his training and it had been a good 3weeks - estimated - i ain't counting. I just cook what's best for him. Still learning the right amount of #protein and I am indeed proud of him not hitting on those powdered supplements. He made his own from natural and much #healthier#ingredients . Such drive and I am happily surprised.
I personally find #breakfast is the utmost important key to being a happier person. Good breakfast makes me happy but somehow today turns out different. Over the last 7 yrs, she has accumulated work experience doing community gardening and urban farming, small scale goat, chicken, and duck keeping, organic vegetable production, permaculture, and mushroom farming. At wellspring, she raises shiitake, wine cap, and oyster mushrooms, as well as various herbs. She is passionate about creating a just and equitable food system.

Wow! This was so delicious and so spicy! 🔥 it was pretty easy to make. Made a ton of food! Could easily feed 3. Especially with a salad or something. The Ramen noodles 🍜 were fresh, which is always a pleasant surprise. I only used half of the shiitake mushrooms 🍄 since Hubby doesn't like them. I also sliced them in half instead of in thin slices so they would be easy to pick out and only place on my plate. The shrimp 🍤 were tossed in togarashi spice which is where most of the heat came from. The recipe called for half an onion but I just used the entire thing. The yakisoba sauce was really special. It tasted like an Asian A1 sauce. Loved it! Loved the squeeze of lime, furikaki and drizzle is spicy sesame oil at the end! My nose was running and my lips were burning while eating this but it was worth it and the perfect amount of heat for me. Hubby didn't think it was very spicy but that's cause he's kinda crazy! I really enjoyed the blood orange soda water that came with this meal. I drank the entire thing while eating this meal.
