Rosa Rugosa! I saw and experienced this special beach bloom last week on Shelter Island and it was quite a thrill to see, especially, as it was out of the corner of my eye, after a moment of gratitude, (which I felt deep in my heart). I had never seen our native rose in person, but when I saw a glimmer of fushcia while I dangled my toes in the water, I was curious enough to run over.
She is quite prickly, but I didn’t get cut by any thorns as I was drawn in by her uplifting scented medicine.
I gathered a pot of petals, in thorough delight.
It has taken me a few days to work with her, but along with infusing the petals in some brandy and honey, I saved a few for something edible...I decided to infuse the remaining petals in a freshly opened baby coconut and see if I could use the coconut flesh to make something like a panna cotta?...This is where I used the Irish Moss!
