Well it’s been a great and lucky past couple days for me. Shot my buck yesterday evening at 405 yards and went in and packed him out this morning. It has been a memorable past couple days for sure. Beau Smith and I have hiked some serious miles the last 6 days. Now it’s time to find beau one as I have only a turkey tag left in my pocket which I intend to fill. Fresh Florida Keys yellowtail are among one of the best eating fish in the ocean.
Here is a simple, yet delicious recipe to enjoy your catch
1 cup macadamia nuts
1 cup panko breadcrumbs
1/2 cup all-purpose flour
1 large egg
4 (6-ounce) yellowtail snapper or other firm white fish fillets
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup olive oil, divided
Sliced green onions
Pulse nuts in a food processor until finely ground. Add panko, and pulse until combined. Place mixture in a shallow bowl.
Place flour in a shallow dish. Whisk egg in a medium bowl. Sprinkle fish with salt and pepper. Dredge in flour, shake off excess, and dip in egg. Dredge fish in nut mixture, coating completely.
Heat 2 tablespoons oil in a large, heavy skillet over medium heat. Add 2 fillets; cook 3 minutes on each side or until golden. (If nuts brown too quickly, reduce heat.) Repeat with remaining 2 tablespoons oil and fish. Serve with rice and enjoy!

Every steelhead is their own unique nomadic book. A book detailing perseverance and a relentless determination for survival. I’m glad to be a short chapter in this one’s story, as it is in mine. Sprinting nearly 100 yds over wet rock with low in morning visibility I was able to bring the fully colored fish to hand for a short moment. #keepemwet

First brown of the season here in NZ and a memorable one at that! We spotted him from the top of a bank and out of the three of us fishing, it was my turn to show my stuff. On the first cast I thought for sure I had messed up by placing the flies too far towards the left but my mates above called strike and from there on it was a hell of ride. The stoke level I felt was unreal and I frothed over this fish for a few hours even after releasing him back. I’ll be dreaming about and awaiting my next encounter with one of my favorite fish species on earth.
