โ€œHere is what I do:
- 1 package (for about 8 chicken fingers or 3-4 cutlets. Use more as required) @jilzcrackerz Mediterranean flavored crackers
- 2 eggs
Blend up the crackers until fine (to use as the โ€œbreadingโ€), whisk 2 eggs in a separate bowl. Dip your chicken (fingers or cutlets) in the breading FIRST then your egg mixture and back again in the breading for more. This helps it get crispy!! I prefer to bake them in the oven on 350 for 15 mins but sometimes will fry them in avocado oil.

You can really use any compliant crackers, or flours, but I find these work the best and are 100% the easiest/quickest & tastiest. This is the only way I make chicken fingers or cutlets now and the family is also obsessed.โ€

Made a big batch of these seeded crackers yesterday for my sister @jennifer.is.my.name as she likes to have them for breakfast with homemade jams or chutneys. For me, these seeded crackers are awesome with yogurt and homemade low carb jams. I just break them into small pieces so they become low carb granolas. These seeded crackers are great for snacking too. Super crunchy and super easy to make with just a bowl and spatula.

INGREDIENTS 
1/3 cup ground flaxseed
1/3 cup each of pumpkin, sunflower, chia, sesame seeds (white & black) & chopped walnuts 
1 tbsp ground psyllium husks 
1/2 to 1 tsp salt
Low carb sweetener to taste (optional)
4 tbsp olive oil
1 cup boiling water

DIRECTIONS 
1. Mix together all the dry ingredients in a bowl with a spatula, then mix in the oil and lastly, the hot water.  It may look runny initially but let it rest for 1 to 2 minutes and it will thicken up
2. Spread thinly on a baking tray with parchment paper.
3. Bake on lower section of oven at 170 C or 350 F for about 30 to 40  mins. After about 10 minutes in the oven, remove and score them into squares with a pizza cutter.  Return to oven and continue baking. Once they start to brown a bit, turn off heat and leave in oven to dry for about 15 mins. The crackers will continue to brown.
4. Score lightly again with the pizza cutter to break them up nicely. Let cool and store in air tight container.

Omgoodness and I thought making a scoby look pretty was hard work; try making pate and crackers look good ๐Ÿ˜ฑ. Homemade pate looks like dogs meat, so I apologise for these photos in advance ๐Ÿ˜†. But I really wanted to share what has become a regular healthy nourishing snack in my home - this pate (recipe by @louisekeats) and these seeded paleo crackers (recipe inspired by @chefpeteevans). Both so easy to make and taste awesome. No more unhealthy options from the shops filled with who knows what!
Oh and surely this is monochromatic boring browns perfect for #getminimal @twolovesstudio right?!

Seeded Flatbread crackers with avocado salad. 
130 gr grated old cheese 
1 tbsp  mayonaise
2 tbsp creamcheese
1 1/5 tsp bakingpowder
70 gr sesameseeds
65 gr flaxseeds
75 gr sunflowerseeds
80 gr pumpkinseeds
3 eggs

Heat the oven at 200 C. Mix all the ingredients. Put parchment paper on a baking tray. Spread the mixture out thinly and evenly. Put another parchment paper on top and try to make it all evenly. Bake for app 15 min until its golden brown. Remove from oven and cut into 16 rectangles. Serve with cheese, veggies or desired toppings. Drink extra water!

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell

Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven

2 tablespoon Chia Seeds

Instructions
Preheat the oven to 150ยฐC / 300ยฐF.

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell

TIP: if youโ€™re using solid coconut oil melt it in with the boiling water first .

Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven

You can choose the cut them now into shape or crack them after they're cooked for a more rustic look

ELLENIEโ€™S SEEDED CRACKERS 
1โ„3 cup almond flour 
1โ„3 cup sunflower seeds
1โ„3 cup pumpkin seeds
1โ„3 cup flax seed or linseed 
1โ„3 cup sesame seeds
1 tablespoon psyllium powder
2 tablespoon Chia Seeds 
1 teaspoon salt
1/4 tsp Fennel seeds (optional)
4 tablespoons melted coconut oil
1 cup boiling water

Instructions
Preheat the oven to 150ยฐC / 300ยฐF.
.

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell
. .
.
TIP: if youโ€™re using solid coconut oil melt it in with the boiling water first .
.
Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven
. .
.
You can choose the cut them now into shape or crack them after they're cooked for a more rustic look
. .
.
Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat
. .

Turn off the oven and let them dry in the oven or on a baking wire rack
. .
.
Break into pieces and store in a container in the fridge. I line mine with baking paper
. .
