Seeded paprika, turmeric and mixed herb crackers - making Christmas presents. You can use any kind of flour (we often use a wholemeal mixture; those ends of bag bits), a mix of any seeds and crushed nuts, herbs and spices you have/think will go well together. Ellenieโ€™s Seeded Crackers 
1โ„3 cup almond flour 
1โ„3 cup sunflower seeds
1โ„3 cup pumpkin seeds
1โ„3 cup flax seed or linseed 
1โ„3 cup sesame seeds
1 tablespoon psyllium powder
2 tablespoon Chia Seeds 
1 teaspoon salt
1/4 tsp Fennel seeds (optional)
4 tablespoons melted coconut oil
1 cup boiling water

Instructions
Preheat the oven to 150ยฐC / 300ยฐF.
.

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell
. .
.
TIP: if youโ€™re using solid coconut oil melt it in with the boiling water first .
.
Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven
. .
.
You can choose the cut them now into shape or crack them after they're cooked for a more rustic look
. .
.
Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat
. .
.
Turn off the oven and let them dry in the oven or on a baking wire rack
. .
.
Break into pieces and store in a container in the fridge. I line mine with baking paper
. .

Seeded crackers 
Scrolling through my photos, I came across these seeded crackers I made a while back. Recipe from @_sarahwilson_ I Quit Sugar book.  Just reminded myself that's it's about time I whipped up another batch. They are perfect topped with mashed avocado, hummous or any other dip. The perfect addition to a lunchbox too... just snap and enjoy! 
Seeds are high in all sorts of goodness.... vitamin B1, calcium, magnesium, fibre and zinc. Sesame seeds contain both magnesium and calcium, both nutrients great for their stress reliving properties, zinc is great for repairing tissue damage and for regulating immune function. 
High in good fats and protein, these grain free, nutfree, gluten free cracker, they are a great choice for all.

Do give these a go! 
Ingredients:
75g chia seeds
75g sunflower seeds 
60g sesame seeds 
50g ground almond
2 cloves crushed garlic
2 teaspoons chopped herbs (sage, oregano, thyme, rosemary)
1 teaspoon @mara_seaweed dulse/seaweed or chilli flakes to taste.
1/4  sea salt

Method:
Preheat oven 170c and line a baking tray with baking paper.

Combine seeds and ground almonds in a bowl.

I'm a separate bowl, whisk remaining ingredients with 250ml water. 
Pour liquid mixture into the seed mixture  and stir until thick/combined.

Spread mixture on tray, pressing down using the back of a spoon until approx 5mm thick. 
Bake for 30 mins. Remove from oven, cut into 30 crackers using a knife. Flip over and bake for another 25 mins. 
Cool on the tray and enjoy. These will keep beautifully in a sealed container for up to 2 weeks.

I seriously LOVE sardines... it feels like my brain lights up as soon as I eat them and no wonder because theyโ€™re just packed with so many vitamins!!! .

Ellenieโ€™s Seeded Crackers 
1โ„3 cup almond flour 
1โ„3 cup sunflower seeds
1โ„3 cup pumpkin seeds
1โ„3 cup flax seed or linseed 
1โ„3 cup sesame seeds
1 tablespoon psyllium powder
2 tablespoon Chia Seeds 
1 teaspoon salt
1/4 tsp Fennel seeds (optional)
4 tablespoons melted coconut oil
1 cup boiling water

Instructions
Preheat the oven to 150ยฐC / 300ยฐF.
.

Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell
. .
.
TIP: if youโ€™re using solid coconut oil melt it in with the boiling water first .
.
Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven
. .
.
You can choose the cut them now into shape or crack them after they're cooked for a more rustic look
. .
.
Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. For an additional 15-mins leave the oven door ajar and the oven on to let them dry out on the low heat
. .
.
Turn off the oven and let them dry in the oven or on a baking wire rack
. .
.
Break into pieces and store in a container in the fridge. I line mine with baking paper
. .

Ellenieโ€™s Seeded Crackers 1โ„3 cup almond flour 1โ„3 cup sunflower seeds 1โ„3 cup pumpkin seeds 1โ„3 cup flax seed or linseed 1โ„3 cup sesame seeds 1 tablespoon psyllium powder 2 tablespoon Chia Seeds 1 teaspoon salt 1/4 tsp Fennel seeds (optional) 4 tablespoons melted coconut oil 1 cup boiling water . . . Instructions Preheat the oven to 150ยฐC / 300ยฐF. . . Mix all dry ingredients in a bowl. Add boiling water and oil. Mix together with a wooden spoon. Let sit for 5 mins so the Chia Seeds can swell . . . TIP: if youโ€™re using solid coconut oil melt it in with the boiling water first . . Cut the dough in half and roll 1 half and then the other, thinly out between 2-pieces of baking paper / parchment paper and remove the top layer of parchment paper, pop them on a tray and put them in the oven . . . You can choose the cut them now into shape or crack them after they're cooked for a more rustic look . . . Bake on lower rack for about 30-45 minutes, check every 15-mins as Seeds can heat up really quickly and burn. CASHEW CHEESE - Onion & Chives 
1 cup Raw Cashews 
1 Lemon, Juiced 
1/2 tsp Himalayan Salt 
1/2 tsp Onion powder 
1-2 tbsp Chives, finely chopped

Soak cashews in 750ml of water from 1-4 hours. Rinse and drain well. Pulse all the ingredients into a food processor. Add 3 tbsp of water and blend till smooth. Just add more water if you want it smoother. Once smooth stir through Chives pop in a jar in the fridge. Itโ€™s better the next day ๐Ÿ‘Œ๐Ÿป๐Ÿƒ

FIVE SEED CRACKERS ๐ŸŒฟ

Delicious gluten free, grain free, vegan, keto, moreish, nutty tasting home made crackers that make a great healthy snack by themselves or with your favourite dip, soup, cheese ...
Ingredients
1 cup sunflower seeds
3/4 cup pumpkin seeds
1/2 cup chia seeds
1/2 cup sesame seeds (I used a mix of black and white sesame seeds)
1/4 cup flaxseed (linseed)
1 tsp salt
1 1/2 cups water
1 tbsp dried herbs of your choice (I used thyme)
1 tsp chilli flakes (optional)

Instructions
Preheat oven to 170C (340F) fanbake.
Mix all ingredients together and leave for 10-15 minutes for the seeds to soak up the water. 
Give everything a good stir, then spread thinly. The ideal thickness is about 3-4mm. Too thin and the crackers will be very fragile, too thick and they'll be more like a seed cookie than a cracker. 
Bake for one hour  or until golden brown and crisp. If they don't feel crisp after an hour, return to the oven for another 5-10 minutes. 
Remove from the oven, allow to cool, then break into irregular shards. Store in an airtight container. 
Note: Once the cracker mixture has cooled, Break them up into irregular pieces OR remove them from the oven halfway through baking, slice into squares or rectangles, then return to the oven to finish crisping up like I did:) .
