Dinner tonight was leftover scrambled tofu (following the Lucy Watson recipe) and beans on red onion and chive bagels!! I’m loving this second trimester, my energy/appetite is finally back! So cooking from scratch most nights which I’ve missed!! This is one of our staple meals, when I first tired scrambled tofu I couldn’t believe how much it tasted like egg just minus the cruelty! Complete game changer for us when we started this vegan journey! Nearly been a whole year 😍 just wish we’d done it sooner!

Breakfast at @szimplyfood 🌟Even though the menu is not fully vegan, some dishes can be made without animal product. The avocado toast I had was amazing with mango sauce.🤩
LUNCH: At @slowfoodiez.hu 🌟I had a Hungarian brunch plate composed of scrambled tofu, grained sausages, salad and toasted bread.🤩It was so good!!!!!
Dinner: I was not that hungry at the time we arrived at @baalbekrestaurant 🌟 so I ordered an artichoke salad, which was absolutely refreshing and delicious!🤩
I spent the weekend with friends who I haven’t met since the start of summer vacation so I’ve already recovered from the non-stop exams in the past two weeks.🌟❤️

Kinda like eggs...but better😏 sauté garlic and onion, add crumbled tofu, black beans, turmeric, cumin, paprika, garlic powder, salt & pepper (and any veggies!!!) and cook for ~10 min, top w salsa💃🏽 happy Sunday!!!!

I am working from home today which also means I'm eating all the food in my flat including this scrambled tofu bagel (bagel is @bfreefoods). Served with spicy garlic mushrooms, spinach and baked beans 🤤

💥Yesterday’s brunch- so good, made it twice 💥
1.Mid heat- fry your chopped garlic and chili. The more the better of all, garlic, chili and oil just cause.
2. Crumble in your solid tofu
3. Add chopped broccoli. In the first batch I used the head of the small bit of broccoli I had, the second batch I used the stalk 🥦 - make sure to use up allllllll of your veg. We waste so much of our food it’s completely unnecessary ✋🏼
4. Stir up, add a bit of oat milk, tsp turmeric for the yellow colour and health. Generous sprinkle of salt and pepper.
5. Slop onto some toasted bread with ballymaloe and dijion mustard.
Some crunchy kale would have be divine on top 🌱
Quick, healthy and tasty af. All the protein without the cholesterol of scrambled 🍳

I feel like as long as you have tofu and nutritional yeast, you can add in whatever you like... but I posted my recipe in the next slide as a guide 💞
What is wrong with eggs? Chicken lay them anyway. In fact, chicken don’t lay them anyway. They were bred to lay as many eggs as possible, the whole year through. A chicken is a bird, which like any other bird, only would lay eggs to make a nest in spring. When she has enough eggs she stops laying and starts breeding the chicks. We have created a world in which we destroy the male chicks and breed as many female chicks as possible in an area as small as possible to gain as much money as possible. Even so with the chickens you buy at the market when you want to keep them in your garden.
So, today I finally made scrambled tofu!
I postponed it a long time because I am not a big fan of tofu. But this is really delicious! And so easy!
You find lots of recipes online. For this one I experimented a bit. I added kurkuma, paprika, and dry herbstock. But first you need to drain the tofu very well!
I put it in a cloth, and you really need to turn around the cloth very firmly so al the moisture comes out. The tofu will break, but don’t mind, you are gonna make scrambled tofu anyway. 😉👌🏻🐣 I also added some sjalots and semi-sundried tomatoes.
