Getting up early is easier when I am making something packed with savory AND sweet goodness. My sister introduced me to making hash browns with sweet potatoes and I’ll never look back! This skillet has the sweet from the potatoes, the savory from the all the vegetables and eggs, AND the salty from the bacon. Simple bowl of savory oatmeal on a winter day. Apples, raisins, cinnamon, nutmeg, chopped walnuts, and vanilla. Lots of good fiber, bit of sweetness from the dried fruit and spices. Happy Sunday everyone!
BRUNCH! I made my corn pancake recipe (a few posts back) into a savory brunch plate w/ arugula, poached egg, @betterbeanco black beans, purple daikon, avocado, green onions & @sietefoods habanero sauce. It was so savory & delicious.
My fiancé made his into a ‘breakfast sandwich’ and used the pancakes as bread and fill it up with all the goodness on the plate & I had mine with a fork & knife 🍴 Sometimes we are such opposites, even the way we eat breakfast 🤣

Savory oats this morning! Nothing revives me and helps me tackle the day like these guys. You get in your carbs, protein, healthy fats, and veggies right at the beginning of the day! So when making the eggs I decided to try that trick where you use the lid of mason jars to keep the eggs together nicely so they look pretty. Well, first, both of my yolks broke when I cracked them in, 🤦🏻♀️and second, I forgot to spray the lids with non stick spray🤦🏻♀️ and they were kinda hard to get out especially because the lids were hot. So, I’ll have to try it again with non broken yolks and spraying the lid and report back then, haha! I hope everyone has a great Saturday! ———————————————————————————
I used 3/4 cup of oats, a handful and then some of spinach, two mushrooms, 1 tsp avocado oil, 2 eggs, EBTB seasoning, garlic powder, salt and pepper.
~ 𝐂𝐡𝐢𝐜𝐤𝐩𝐞𝐚 𝐯𝐞𝐠𝐠𝐢𝐞 𝐬𝐜𝐫𝐚𝐦𝐛𝐥𝐞
What I used:
➵ 1 cup cooked chickpeas (can use canned, just rinse)
➵ 1 cup shredded zucchini ➵ 1 spring onion (save the upper part for topping)
➵ 1/2 cup grated carrot
➵ 2 handfuls of spinach (chop it so it’s evenly distributed)
➵ Himalayan salt
➵ 1/5 medium avocado ➵2-3 @sanissimomx baked tostadas
➵ lemon juice ~ seasonings:
➵ ground cumin
➵ ground garlic powder
➵ turmeric + black pepper (for color and anti-inflammatory effect)
I don’t really use oil for cooking anymore (but I still use it in some recipes), so I sauté everything with a splash of water.
First add the chopped spring onion until it starts to look slightly translucent.
Add the carrot and zucchini and cook for a 1-2 minutes.
Add the chickpeas and slightly mash with the back of a wooden spoon or a potato masher.
Keep adding water if necessary.
Add your spices and cook until you’re happy with the consistency.
At the spinach at the very end! Stir it for around 30 seconds :)
Serve over the tostadas and top with avocado, spring onions and squeeze some lemon juice. Enjoy!

Our sugar update day 6: still going strong, I made bread (sans sugar) so we could continue to eat sandwiches, but breakfast has been the hardest meal to keep sugar out of! Enter the cheesy grit. Cheesy grits with chopped spinach, grilled ham and an over easy egg were just the ticket! It is a little heavier than I usually do for breakfast but it was the bomb. 🍛
Day 1 was tough and I almost passed up my coffee without sugar, but 6 days in and I don't hate it! ☕️ I still have 8 days to go so hook a sister up with your breakfast ideas please!

🍃 Un puñado de espinacas
🥚 90gr de claras
🥤 Un chorrito de agua
🥣 33gr harina de avena 🍦levadura en polvo
Batis todo bien, y dejáis reposar la masa unos 25 minutos, luego sólo tenéis que ir haciendo ej la sartén y listo.
📝La crema de yogur sólo tenéis que mezclar
🍋 Un chorrito de limón
🍧 45gr de yogur griego
🥢 Sal y pimienta negra

📝To make spinach pancakes you need
🍃 A handful of spinach
🥚 90gr egg white
🥤 A little of water
🥣 33gr oats flour
Whisked all ingredientes and reserve it about 15 minutes, later make one by one in the pan.
📝To make sour Greek Yogur you need to mix
🍋 A little of juice lemon
🍧45gr greek yogurt 🥢Salt and black pepper

Breakfast rice bowl 🍚
When I did my meal planning and grocery shopping yesterday, I planned on having quinoa breakfast bowls this week, however, since I made rice with my tikka masala last night, I decided to double the recipe for an easier meal prep!
The rice is a lime cilantro rice (fresh cilantro, juice + zest of 1 lime), with avocado 🥑 tomato 🍅 and a poached egg 🥚 on top, covered in everything bagel seasoning!
I also completely doused this in hot sauce post picture 😅😋
Since the rice was made and the egg takes 1 min to poach in the microwave, I was literally eating in 5 min!
