Breakfast sandwich - I should have picked this up for a better shot, but I was too hungry to fuss with this. 😊 Sauté sliced sweet onions in EVOO and then crack an egg over them, sprinkled with salt and pepper and cover over low heat for 3 mins; toast wheat bread in the meantime, and then lay a piece of black forest ham and a slice of provolone (gruyere would be incredible, too) over the egg and cover again to melt the cheese a bit. I made these Italian Chicken Sausage meatball subs with a quick homemade marinara the other night and they turned out amazing!
1 lb Mild Italian Chicken Sausage (hot would be awesome!) 1/4 c grated Parm-Reg
1/3 c Panko (could add more to make them easier to roll, but I ended-up just plopping the meatballs into the pan)
2 garlic cloves diced
1 tsp parsley
1 Tsp kosher salt
Mix together and roll into 1” balls - I cooked on med-low and turned every few mins for about 9 mins, but you could bake these too and that would be easier. I nestled them into Brioche rolls with melted Provolone.
Chicken Divan by #carlsbadcravings was really yummy. It took me much longer to make than the 20 mins prep time listed and I’m not sure why. I only stopped to feed the dogs while the chicken was cooking and basically ignored my child so I could get dinner made before 8pm, but for whatever reason, start to finish, this took me about an hour and 45 mins.... 🤷♀️ But the end result was worth it. I’m all for making things from scratch, so the fact that I. Ow have a recipe to replace canned cream of chicken soup makes me very happy! This is NOT low fat or low cal, so line this baby up for your cheat meal and enjoy!! I didn’t have bouillon so added extra Dijon and Worcestershire and it was great. I topped over Basmati, but it would be even dreamier over Jasmine rice or mashed potatoes, as suggested in the recipe.
