📝 Set inside a revitalised train carriage, this joint and its menu represent all things Melbourne! The burgers were stacked high and packed in well. The moist beef, crispy bacon, cheese and aioli worked a treat! However, the fried chicken was a touch dry and the burger needed more of the tangy bbq sauce.. I like my burgers dripping... like those sweet and succulent wings were!! The cheesy tots were gooey, crispy and hit my comfort cravings like a good side dish should. A solid feed.
The key to a flavourful béchamel sauce is infusing the milk with onion and spices.
Use in: lasagna, gratins, mac & cheese, classic cheese soufflé... Ingredients
1 bay leaf
1 medium onion, peeled and sliced
A few whole black peppercorns
3 tbsp butter
3 tbsp flour
3 cups Europaea Free Range Farms 3.5% fat milk
½ tsp grated nutmeg
1 tsp sea salt
½ tsp freshly ground black pepper
Add the bay leaf, onion slices, peppercorns to the milk and bring to a boil. Remove from the heat, cover and leave until cold. Strain the milk and keep aside. Melt the butter in a saucepan over low heat; add the flour and cook, stirring, for 1-2 mins. Gradually whisk in the milk, a little at a time on very low heat, stirring constantly. Simmer until thickened and smooth. Add nutmeg, sea salt and pepper.
