This was a surprising find in Bexleyheath. We were on the lookout for a quick bite to eat and came across the @gigglingsausage. It looks like any other cafe but there was a sign that caught our attention saying that they serve homemade salt beef. Well we had to try it and it's really good! Generous amounts of fall-apart salt beef, with the right amount of mustard and gherkins. Accompanied by fluffy and crispy chips. Delicious!
Or at least it looks and tastes like pastrami. I just can't help thinking I've gone wrong somewhere! So this was brined for a week in a solution that included kosher salt, Prague #1 curing salt, sugar, honey and various pickling spices. It was then rubbed with pepper, coriander, sugar, paprika, garlic powder, onion powder and mustard powder and left in the fridge uncovered for 2 more days.
This was then smoked at 225f for 4 hours until it hit 150f, then moved on to a rack in a roasting tin to steam until 203f. I read that this step should take a couple of hours. It went in at 3pm and by 10pm, it was still only 190f and when probed, felt really solid. The oven temp was at 300f the whole time. I checked and there was still water in the pan so I left it and fell asleep on the sofa until 1am! The temp at 1am was 197f and the water had evaporated. I then gave up as I'm pretty sure 10 hours being steamed is far too long and something had gone wrong. Plus I had to be up early for a meeting so couldn't babysit it any longer!
So...any ideas what could have gone wrong? It tastes like pastrami but is really dry, definitely not what I was expecting. I'm not going to give up so any pointers anyone can give would be great!
It's still an outdoor cook, do that's now 163 down, 37 to go!
Delicious salt beef reuben @montys_deli in @oldspitalfieldsmarket. First meat dish in quite a few days so it had to be good, obviously. Made healthier with a side of coleslaw with sriracha sauce and promptly offset by a can of Coke.
