On my feet for a good bit of the day, still was not back at the gym but I hit my 20k again for the first time since Monday! Finally starting to feel like myself - except today I had no voice - it made my day at work rather challenging and because I was the only one in my team on staff today and had to use my voice at points it feels pretty strained at the end of the day. hot tea with ginger, lemon and turmeric still left me with a dry squeak. My work is within the geriatric population - if they could not hear me already - they definitely did not hear me today 🤣. And I’m back in tomorrow. Made a #salad tonight, base of spinach topped with #beet, cucumber, #broccoli, yellow pepper, red onion and @gardein “chicken” and topped it with Trader Joe’s sesame ginger vinaigrette. 🌿——————————-

As promised, my current obsession homemade "ranch" dressing:
🤠
- 3/4 cup of homemade mayonnaise (see previous post)
- 2 tbsp of lemon juice
- 4 tbsp of vinegar: champagne, white or red wine vinegar work well
- 2 tbsp of olive oil
- 1/2 cup of freshly chopped dill
- 1/2 cup of freshly chopped parsley
- 1/4 cup of freshly chopped chives
🤠
In a bowel whisk all the ingredients together, adding the freshly chopped herbs at the end.

This will make a thicker dressing good for dipping veggies, crackers, chicken fingers - whatever you like.

To make the dressing thicker increase the mayo.

If you want to make the dressing thinner to use with salad, you can add 3-6 tbsps of coconut milk.

This stuff doesn't last long around here. The second picture shows how much I have already enjoyed the batch I made on Sunday. I hope you enjoy it as much as I do.

Perking up with a grilled cheese and some cucumber sticks for #lunch - I really am not a huge fan of crisps so I’ve never found that to be an issue on my #healthyeating journey. It doesn't always have to be fancy or topped with every seed under the sun (although I'm not going to lie, that is preferable). Could she be a more gorgeous salad? Sure! But greens are greens and sometimes it's just about getting them in no matter how pretty or #basic they may appear!

I'm not going to apologize for the influx of salad posts because I have dubbed myself #saladqueen  👸 It doesn't always have to be fancy or topped with every seed under the sun (although I'm not going to lie, that is preferable). This middle ear/sinus infection has really knocked my down the past couple days. I missed work, the gym and being mindful about what I’m eating. Was back to work today, and even took a bit of a walk after just to get in a few  more steps though I’m not ready yet to go to the gym - I’m still having a difficult time breathing properly at times 😂. I got in just over 17k so I’m going to call that good go a non work out work day, also very close to calorie goal. Made a good #salad tonight with #lentils and #sundriedtomatoes, with spinach and red onion with a lemon #tahini dressing. Hoping to feel even better tomorrow. Also loving my #vegan fork from @thefamilyvegan! 🌿————————————-

It's funny how life pans out sometimes, specially when you have a particular plan it doesn't work the way you want it too 😉 that was exactly my day all day today....I won't go into details but I'm definitely laughing about it now 😂😂 lets just say I'm ready for bed ... I've definitely been on a pasta + salad kick lately but it's what I've been craving + I'm going with it!

Cheese and crackers reimagined: into my salad. Kale, @gothamgreens Rooftop Red Oak lettuce, diced cooked beets, diced celery, and diced organic Honeycrisp apple. Topped with Humboldt Fog chèvre and some broken Triscuit crackers. The dressing is my Brazilian grandmother’s famous recipe, which is made from olive oil, red wine vinegar, soy sauce, a clove of garlic (crushed with a garlic press), a pinch of dried oregano, honey, and salt and pepper to taste. (I also added a small squeeze of anchovy paste in mine). My allergies have been pretty bad today, the mold count has been extremely high and I have been known to have a sensitively. Because I’ve been pretty congested I did not work out as hard tonight, but I still got in cardio and some weight training. Not feeling my best I picked up a can of @amyskitchen #lentilsoup on my way home from the gym. I’ve been good in calories today and and got in good steps. So tonight’s dinner is the #soup and a small #salad - a base of #kale topped with broccoli, yellow and orange peppers, cucumber, red onion and pumpkin seeds with mustard dressing. ———————————————

Not a salad freak but I like being healthy!
Recently some friends and I wanted to have dinner. But we couldn’t agree on a place to eat! Because the healthy options were dismal. 
We’re all getting older and we need to start providing for our bodies better. 
I appreciate places that give decent salad options because it’s odd how hard it is to find good salads in a tropical country like Naij. 😬

A smooth but unusually long day at work, 11 hours later I’m home. I did not make it to the gym - and I’m shy on steps, and I over spent on calories just a bit, but it’s not out of control, and the gym is waiting for me tomorrow! I managed to make a tasty #salad. A base of #kale (i picked it up at the @soarfarmersmarket this morning) and spinach topped with mushrooms, cucumber, red pepper, red onion, carrots, a beet (also from the #farmersmarket) and baked #tofu. Tonight I’m back on my #salad game, a base of spinach topped with #broccoli, yellow pepper, red onion, mushrooms, some lovely #sapphiregrapes (#moondrops) I picked up over the weekend (soooooo good) and baked #tofu.
