How to cook the perfect steak.
Step 1. Season meat generously. Dont be shy, it can take it.
Step 2. Heat a heavy based pan till really hot with a little splash of oil. Place steak fat side down and cook till more fat renders and the fat is brown and crispy.
Step3. Flip the steak on its side and cook till its golden brown. Flip onto the other side and add a knob of butter, a smashed garlic clove and thyme. Baste the steak with the foaming butter until medium rare or to your liking. The butter and the herbs will add flavour and colour.
Step4. Rest for 10 minutes on a wire rack. This is very important. If you cut it straight away, all the juices will run out.
Step5. Cut the meat against the grain and place on a platter. Spoon some of the leftover butter and herbs over the steak and sprinkle with good sea salt. Enjoy!!!! Suitable cuts:
