Well, it's definitely lovely weather for ducks today 🦆🌧️ While it's blustery and wet outside, I try to keep the house as warm and cosy as possible, and what's better for a snuggly Sunday than fresh scones for brunch?
Follow the recipe below for a sneaky quick cook up.
3 cups self raising flour
1 cup / 250 ml heavy cream (not whipped)
1 cup / 250 ml cold lemonade (fizzy, plain Lemonade in a bottle e.g. Schweppes, NOT solo)
Preheat oven to 200C standard or 180C fan forced
Combine the flour, cream and lemonade in a bowl and mix until just combined. Do not over mix, it will make the scones dense! The dough should be soft and REALLY sticky.
Turn out onto a floured surface, and gently pat down to 2.5cm-ish thickness.
Use a round cutter to cut scones (or a glass if you don't have scone/cookie cutters). Flour the cutter in between so the dough doesn't stick. I usually get around 10 all up with a little dough left over
place on a lined or greased tray, slightly touching each other (they help each other rise) and bake for 12 to 15 minutes until golden on top.
Place on rack to cool so they get crusty, or eat warm for slightly crumbly scones
Serve with copious amounts of cream and jam. (Pictured here are strawberry kiwi, quince jelly, marmalade and blackberry apple. All currently available on the website). **Please note, I personally use zymil lactose free cream (full fat) and white wings gluten free flour when my intolerances are being mean and they're a straight swap for their non allergen friendly counterparts.
