Does anyone else start working on a job in one room, but you find something that needs to be put away in another room, so you go to the other room to put it away and then you start working on a completely new task?! 😂 Repeat. Repeat. Repeat. .
By the end of the day, I've started 10 different jobs and finished none of them! Ugh!
After a day like this a simple but filling vegan dinner is in order. It might not be the most beautiful plate I’ve ever made but it was damn delicious 😋!
We had roasted red curry tofu (get the recipe below), @calorganicfarms sautéed garlic Swiss chard, @calorganicfarms roasted potatoes (our favorite! 🤤), and Brussel sprouts.

Roasted Red Curry Tofu
2 tbsp red chili paste
1/2 cup coconut milk
juice from 1/2 a lime
1/2 tsp garlic powder
1/4 tsp onion powder
1/4 tsp curry
1/4 tsp cumin
1/4 tsp smoked paprika
1/4 tsp garam masala
I block firm tofu
Mix all sauce ingredients in a container with a lid. Add 1 block of firm cubed tofu (pressed), put the lid on and shake it until all the tofu pieces are coated in the sauce. Put it in the fridge and let it soak in the marinade for one hour.
Put the tofu on a parchment lined tray and Bake at 400 degrees for 25-30 min or until crispy.
Sweet Thai Chili Shrimp
Sauté shrimp until cooked evenly for 8-12 mins on high. Shrimp should be sautéed with 2 tablespoons of olive oil and a dash of salt and pepper. Also add a teaspoon of garlic. Once finish add 2 cups of sweet Thai Chili sauce that can be picked up from #kroger .
Cut up fresh pineapple, red pepper, mango, red onion into fine pieces and place into a bowl. Add is some fresh lime juice( 1/4 cup) and cilantro( 1 tablespoon) w/ a dash of salt and pepper. Mix and complete.
Roasted Red Potatoes
Clean and cut red potatoes into 4. Once finished with all potatoes put them in a bowl with 3 tablespoons of parsley(fresh or dry), 4 tablespoons of Olive oil, 2 tablespoons of melted butter( Land O’Lakes), 3 tablespoons of Ms. Dash Garlic & Herb, 3 tablespoons of minced garlic, 1 tsp of black pepper, fresh rosemary stem. Lay on a flat sheet and spread them out. Place in a preheated oven of 425 for 30-40 mins( depending upon how brown you like them). Honey-Lemon Asparagus
After cleaning and cutting ends of Asparagus, place in a bowl with 2 tablespoons for olive oil, 1 tablespoon of garlic, 1 lemon freshly squeezed, 1/2 teaspoon of pepper, 1/2 teaspoon of Tony Chachere creole seasoning, and 2 tablespoons of raw honey. Once mixed thoroughly.....Place asparagus on a flat cooking sheet and bake in oven on 425 for 12-15 mins. After 6 mins, pour rest of mixture on asparagus and finish cooking.

Ingredients💃🏽 • 2 medium sweet potatoes🍠 • 1 tsp olive or avocado oil🥑 • 1/4 tsp paprika • 1/8 tsp cinnamon • Coarse sea salt (to taste) • Freshly cracked black pepper (to taste)
1. Preheat oven to 400° F. Line a baking sheet with parchment or a silicone baking mat.
2. Wash sweet potatoes and dice into even cubes (about 1 inch). 3. In a large bowl, toss sweet potato cubes with oil and spices until coated evenly. Spread onto lined baking sheet, spaced evenly so that they are not touching.
4. Roast potatoes for 30-45 minutes, stirring every 10 minutes or so, until done.
On tonight's menu - smashed roasted baby potatoes!
These are so simple and so easy to change up the flavors. I did garlic parmesan last time. Tonight might be cumin cilantro or maybe sweet chili.
Just boil the potatoes til soft- about 15 minutes.
Then place on a baking sheet and smash with a fork or back of spoon.
Drizzle potatoes with oil, sprinkle with sea salt and spices - whatever you choose.
Roast in the oven at 400 for about 15-20 minutes.
