Had today off and felt great to get back into routine of cooking ❤️ it calms me. I meal prepped Lunches and breakfast for the week, and made my fave #glutenfreebananabread .Having this as a quick dinner (with intention of eating a big ol’ slice of banana bread for dessert) ✅ This is arugula dressed with mixture of oil, #ricewinevinegar , S&P, honey and yellow mustard. I threw in cooked quinoa and shredded carrot and radish.
Vegan sushi is my favorite! All you need is onions, avocado,asparagus, cucumber, carrots and peppers. You need 2 cups of sushi rice because it needs to be sticky . Nori sheets can be bought at Whole Foods or on line. Shred vegetables, cook rice but add rice 3 T rice wine vinegar to the water when cooking the rice. Put the nori dry side up and put rice on it. I add mayonnaise on the rice then add the vegetables and roll. Slice on an angle then plate and be proud!

Burger night ...since I ate half+ an 🥑 for lunch on avocado toast, I passed on topping my burger with it! Years ago, one of my skinny AF friends turned me onto seasoned rice wine vinegar...yes, I know, it has the “white devil” in it, don’t judge, I’m not on Whole30 now and I definitely don’t care! I will say I use it sporadically but boy oh boy it is great for topping a light summer salad, you don’t even need oil (and at 20 calories per TBS who the H really cares if it is slightly sweetened, it saves MAJOR calories vs. other dressing). This salad was plain and super light but a great accompaniment to the rich meat.
