As millions of bats woke up and the sun set we whispered “we’re in Cambodia!”
Yesterday we went for a ride on the bamboo train, saw rice paper wrappers being made, and witnessed the bats on their night hunt. We also visited one of many killing fields and killing caves where the Khmer Rouge murdered millions of Cambodians between 1975-1979.
Note: unlike the many tourists we saw taking selfies on these mass grave sites, we chose not to take pictures out of respect. The third picture is of a shrine outside of a former women’s prison and Khmer Rouge torture center.
A few days ago I made vegan spring rolls 🌈🌱. Ohh I love rice paper rolls so much! Especially when they look so colorful. I filled these wraps with my favorite vegetables: red bell pepper, orange pepper, red cabbage, lettuce 🥬 and corn 🌽. I also added some mango because I wanted something sweet🥭. At first I thought it wasn’t a good idea but these rolls turned out to be amazing! The sweet flavor of the mango combined with the flavor of the rest of the ingredients was amazing! I encourage you to be playful in the kitchen, try new things, make crazy combinations... you never know what you may discover! 😝 How are you feeling today? I hope you enjoyed the weekend. I spent most of the time at home because I had to study for my finals✍️. However I went shopping on Saturday and I found a new store where I can get tropical fruit and rare vegetables that couldn’t find here before! That was pretty exciting and it made me so happy😀 now I can try fresh dragonfruit and I can buy passionfruit (which I love so much!). I was feeling pretty upset on Saturday, I didn’t want to leave the house because I had lots of work to do, fortunately my mum convinced me to go for a walk and it changed my mood. Stay positive my friends, you never know what’s around the corner!
