Sometime last week, my husband and I realized that Ramadan is coming to an end and we still have sooo much milk in the freezer that we thought we would use for milkshake and just didn’t get down to it cause we kept being invited out for supper. 🤦🏻♀️ Unfortunately, milk has an expiry date and it would be such a pity to let so much milk go to waste. Actually, it would be wrong. I always feel bad to waste food cause as a child I was told one too many times that wasting food is wrong and that there are those people out there who starve yet I’m wasting 🙈. Those words stuck with me as an adult because it’s so very true. The things we take for granted, so many other people do not have. It’s absolutely important to make shukar for what we have. Anyways, long story short, I decided I’ll give it a go at Kheer, but all the recipes I came across and googled all require condense milk and some call for saffron. But I’m not one to keep that stuff in my everyday groceries. Finally, I did find a recipe that I could make based on the stuff I found in my kitchen 👇 check below for the recipe.
PS: the flower is safe to use for decorations, i googled it and I always cling the bottom of any flower I use just to be safe 🌺
4 ingredient Kheer recipe:
1/4 cup basmati rice
1 litre milk
1 tsp elachi powder
4 tbs sugar
Soak rice for 30 minutes and drain. Bring milk to boil, once boiling lower heat, and add in uncooked rice. Cook on low heat for approximately 30 minutes or until rice softens, mixing often to ensure that it doesn’t get caught at the bottom. Add in elachi and sugar and mix well. And cook for a further 5 minutes mixing often.
Optional: add in crushed almonds when you add in the elachi.
Today I made homemade chicken, broccoli 🥦 and rice 🍚 for George and he loved it so much he made me take a picture of it. He’s the sweetest and I love cooking for him. I know how much he loves my cooking and appreciates the time and effort that goes into it.
