Together with the teachers from my girls school we have set-up a healthy eating challenge for the kids ahead of healthy week. To make it accessible to all kids, regardless of age and what their current diet looks like, children can write a recipe, draw healthy foods, cook something, put something together or maybe photograph it.
We’ll be encouraging kids to ADD a portion of fruit or veg a day!
To take responsibility for their own actions - we wouldn’t want to eat a whole packet of biscuits, just as we wouldn’t want to eat a whole bag of apples.

Tahini & Blackberry Overnight Oats by @anna.culina

60 g oats
1 tbsp chia seeds
1 generous Tbsp tahini
1 ripe mashed banana
3 dates, chopped
100 g blackberries
1 pinch of salt & cinnamon
300 - 350 ml spelt milk / milk of your choice
Maple syrup to sweeten (optional)
Combine all ingredients and refrigerate overnight (obviously 😋). Enjoy with a drizzle of maple syrup and more fruits.

These are a great solution full of healthy ingredients that'll leave you feeling a lot less guilt! (They're also vegan if that's your thing!) TIP: Remember it's still extremely high in calories and fats (but not all are created equal people AND THESE ARE THE HEALTHY KIND!) So please do always keep portion control in mind! They'll be so decadent you probably won't have any issues though! I'll sub almond butter for peanut cause it's what I have on hand and #peanutbutterislyf anyways 😏

Is there a place for rice if you’re on a weight loss journey??? I’d say no too white rice.... way to starchy and sugar impactful, but wild rice has lots of good properties, and let’s not forget there is no point trying get slim if your first aim isn’t to get healthy!!! So you need some good carbs and fibre! f a c t !!!!! Wild rice is packed with B Vitamins; B vitamins have so many important roles in the body and it’s easy to get low; most of us would like to feel more energised wouldn’t we? If you are low on B Vits you won’t be feeling your best as they are vital for maintaining cell health and energy production as well as breaking down sugars, carbs and fats in the bloodstream • we know that white rice is really high in sugar, but wild rice, with all the fibre retained, is Much lower glycaemic load and an Excellent source of B Vitamin, fibre and a good amount of protein too! Black wild rice takes longer to cook than white rice and I recommend soaking it prior to cooking too. To make a salad of this kind of size (I never weigh anything...) about 2 cups of rice... Once cooked let it cool a little and add 1 chopped cucumber, 1 chopped avocado, 2-3 chopped spring onions and a dressing of olive oil and fresh lime juice with chopped fresh coriander and mint • I kept this salad as simple as that but chopped mango goes well with this, so too an added sprinkling of toasted pumpkin seeds • however you make it, it keeps well in the fridge for a couple of days and def serves as a meal in its own right xx

After having the moodiest of Monday’s today I’m thankful I had this roast veggie salad to come home to 😍 I try roast a batch of veggies each week in olive oil & spices, that way lunches & dinners are pretty much taken care of -add greens, protein + healthy fat & you’ve got a delicious meal ready in minutes 👌🏻💫🌿

🍫🥜CHOCOLATE & PEANUT BUTTER CUPCAKES 🍫🥜
The recipe for the cupcakes are below! Although the filling and the icing recipe will be posted in the next photo to come ✨ I’m definitely enjoying making cupcakes these days!
Cupcake recipe sourced from good baby kitchen 🙌🏼 Ingredients:
* 1 cup (150g) self-raising flour
* ½ cup (100g) firmly packed pitted dates
* 1/3 cup (100g) rice malt syrup
* 100g nuttelex
* 1 teaspoon of natural vanilla extract or vanilla bean paste
* 1/3 cup of cacao powder
* 1/2 teaspoon bi-carb soda
* ½ cup almond milk
* 2 eggs worth of natural egg replacer (I used flax eggs 2 tablespoons of flaxmeal and 6 and half tablespoons of hot water). Method:
1. Pre-heat a fan-forced oven to 180 degrees and line two cupcake trays with 12 patty cases.
2. Place dates, rice malt syrup, carob powder, vanilla, egg mixture and half the milk into a food processor and blend for at least three minutes, until all the dates are processed and you have a smooth chocolate mixture as shown below. The longer the better when it comes to the time they are blending in the food processor.
3. While the date mixture is combining in the food processor, cream the butter in a large bowl with an electric beater for five minutes. Stop halfway to scrape any butter back into the centre of the bowl that might have escaped up the sides.
4. In a separate, smaller bowl sift the flour and bi-carb soda together.
5. Slowly add sifted flour and chocolate mixture to the creamed butter in alternate batches. Beating each time until just combined.
6. Add remaining milk to the mixture and beat until just combined.
7. Spoon mixture into patty cases and fill to around half to three-quarters full depending on how big you want the cupcakes.
8. Place in oven for 15-20 minutes or until a skewer inserted into the centre of the cupcake comes out clean. Check at 15 minutes if they are cooked as you don’t want to over bake.
9. Allow to cool for a few minutes in the tray before transferring to a wire rack to cool completely.
This will make around 12-16.
