For the ingredients, please see next photo.
1. Cup of grated raw beetroot (juice squeezed out)
2. Cup and a 1/4 of almond meal
3. Half cup almond milk (or you could use almond oil or coconut oil)
4. 3 eggs
5. 1/2 cup raw cacao powder
6. 1/2 cup maple syrup or xylitol
7. Heaped teaspoon of gf baking powder.
1. Preheat oven to 180 degrees Celsius.
2. Line a square 23cm x 23cm baking dish/tray with baking paper.
3. Mix all ingredients together in a Bowl.
4. Pour batter into dish and bake for about 25 mins.
5. Cut up into squares and serve as they are, or with some fresh fruit on the side and a small drizzle of maple syrup over the top.

Who else has a sudden urge to make a chia pudding? 🥥
Chicory salad at @holidaypdx, absolutely loaded with crispy tempeh. This place is way too cool for me (am I the last person on earth who doesn’t have a lovingly tended nursery of tropical plants in my open concept living room?) but this salad was 👌and I’m feeling pretty validated about our choice to put enamel dinnerware on our wedding registry. This also reminds me of the time I wrote an article for @pomomagazine in 2013 called “Winter Salads: Beyond the Kale” and it sinks in that I’ve made a living writing puns and eating salad for most of my adult life. Not complaining. I like salads and puns, at least more than I like tropical houseplants.

Hands down, pistachios are THE most underrated nut. Which, 1) is not a sentence I thought I would ever type. And 2) is not a sentence I ever thought I would sincerely agree with. But it’s true, they’re the backbone of the nut world and salted pistachios are seriously everyone’s weakness. Don’t even deny it. •

To make the sauce I blended 5 soaked Dates, 1 Tbs Peanut Butter, 1 Tbs Cacao and Almond Milk (there was heaps leftover which I plan on dipping some fresh Strawbs into later... yum! 🍓🍫😜)
