#NewRecipe : MARINATED BROCCOLI AND TOMATO SALAD
1 bunch fresh broccoli (boiling salt water)
¼ fresh mushrooms
¾ cup drained, pitted olives
1 cup cherry tomatoes
1/3 cup olive oil
1 Tbsp white wine vinegar
1 Tbsp lemon juice
2 Tbsp chopped fresh parsley
1 green onion, minced
1 clove garlic, minced
½ Tsp salt
¼ Tsp freshly ground pepper
1. Trim flowerets from broccoli, you should have about 1 quart. Reserve stems for another use. Drop broccoli flowerets into boiling salted water for 1 minute or just until they turn bright green; drain.
2. Trim mushroom stems to ½ inch. Combine broccoli, mushrooms, olives and cherry tomatoes in a bowl. Measure oil, vinegar, lemon juice, parsley, onion, garlic, salt and pepper into a small bowl. Whisk until mixture is smooth. Cover and refrigerate three hours or more until ready to serve. Makes 4 servings. More delicious recipes at damien-pierre.com.
🍴Healthy Keto Mexican ⁉️
Here’s a super simple keto enchilada recipe that will be a winner with the whole family!👇🏼✨
1️⃣ Preheat oven to 350 degrees
2️⃣ Shred a rotisserie chicken and add green chilies to make your stuffing.
3️⃣ Place parchment paper on cooking sheet.
4️⃣ Scoop small mounds (size of small tortilla) onto parchment paper and cook for 7 minutes ⏲ or until the edges get a little brown.
5️⃣ While these cook, heat a can of red enchilada sauce on the stovetop.
6️⃣ When the “tortillas” are done cooking pull them out and scoop your chicken mixture to one edge. Roll to form your enchiladas 😋
7️⃣ Top with the red enchilada sauce and garnish with sour cream, green onion, and olives.
🍽 Dinner is served 😉
