👋 I've been trying to cut down on meat for probably the last year and a half, and for a year or so before that started to think a lot more about where my meat was coming from. This was largely based around environmental impact of meat, sustainability and health.

Recently though I have read a number of articles (e. g. below) and listened to a podcast (The Green Pill, Ezra Klein) which have, respectively, given me an evidence-based kick up the arse and made me think, in a way I never have before, about the ethical issues surrounding meat and other animal based products.

So, because I'd been thinking about setting up a new IG purely as a food based creative outlet (I mean, we'll see how creative it gets...😂) I would combine the two trains of thought, and here we are.

Now, and I feel like I need to say this from the outset, I'm under no illusions that I'm going to become some full-time food blogger extroidonare. One of the things I really value about IG is the opportunity to record memories of your life in a really visual way. I have always failed at keeping any kind of paper journal, but I love taking (v amateur) snaps of food and I've always enjoyed writing casual bloggy type content, be it for work or pleasure.

I'm going to combine all this here and use this page to plot a journey from where I am now with my diet to wherever it is that I end up, whenever I get there. I intend to post recipes, stuff I learn, and to be really honest about what I'm eating and why.

-	400 gr de leche condensada
-	400 ml de  leche evaporada
-	1 1/2 tazas de leche entera
-	1/2 taza de media crema
-	1/2 taza de almíbar de piña
-	1 taza de piña
-	28 gr de grenetina
-	1 1/2 tazas de zanahorias rallada
-	1 taza de piña en almíbar
-	1/2 taza de nuez picada
-	al gusto de crema batida

Preparación
1.	Licúa la leche condensada con la leche evaporada, la leche entera,la media crema, la piña en almíbar, la piña y agrega poco a poco la grenetina hidratada.
2.	En un molde previamente engrasado, coloca la zanahoria, el resto de la piña en almíbar y las nueces. Vierte la gelatina y refrigera por 2 horas o hasta que cuaje.
3.	Desmolda y decora con crema batida.

Chickpeas & Kale with Cilantro Brown Rice. I normally boil chickpeas, today I tried something different which is actually cooking them. 🔸️PREP:

Sauteed Onions and Red Peppers, added the garbanzos, seasoned with salt, pepper,  cayenne pepper, bay leaves, liquid aminos and ground cumin. Cook for about 10 mins then added cilantro and Kale, finished cooking in Low for another 3 mins and that's it 😊. Super quick and tasty 😙👌🏼 ---------------------------------------------------------------------------------- Una de las comidas de esta semana.

Garbanzos y Kale, arroz moreno con cilantro. Normalmente hiervo los garbanzos, hoy probé algo diferente, trate de cocinarlos. 🔸️PREPARACION:

Poner las cebollas y los pimentones rojos salteados, añadir los garbanzos, sazonados con sal, pimienta, pimienta de cayena, hojas de laurel, aminoácidos líquidos y comino molido. Cocinas aproximadamente por 10 minutos, luego agregas cilantro y Kale. Terminas de cocinar en fuego bajo durante otros 3 minutos y eso es todo 😊. Súper rápido y sabroso 😙👌🏼

Made some #mealprep #chili today. Literally the easiest quickest recipe and its vegan 🌱. I'm not vegan but I do like an occasional meatless day. To make it easier you can use 1 package of taco seasoning instead of the spices. • 1 cup diced red peppers
• 1 medium white onion diced
• 1 can diced tomatoes not drained
• 1 can black beans, rinsed
• 1 can kidney beans, rinsed
• 1 can peaches and cream corn
• 1 package meatless ground (about 2 cups)
• 1 tablespoon cumin
• 1 teaspoon chili powder • 1/2 teaspoon each onion and garlic powder

Sautee peppers and onions until tender ° add spices and cook for 1 min ° add the remaining ingredients, bring to boil, and reduce to simmer ° simmer with lid for 20 mins

6 servings ° 24.3 P, 4.2 F, 48 C per serving •

-	2 cdas de chile habanero picado
-	1 taza de sandía en cubos
-	3 aguacates en cubitos
-	1 pizca de sal
-	1 cda de jugo de limón
PREPARACIÓN:
1.	Con ayuda de un cuchillo y una cuchara, ahueca la piña y corta el relleno en cubos pequeños. Reserva.
2.	Mezcla en un bowl la cebolla morada, la piña, el cilantro, el mango, el pepino, el chile habanero, la sandía y el aguacate, mezcla hasta que estén todos los ingredientes integrados, sazona a tu gusto, agrega el jugo de limón y reserva.
3.	Sirve el guacamole en la piña y acompaña con chips de pan pita. Disfruta

1 pound Bacon⠀
12 Eggs⠀
1/2 cup Half and half⠀
1/2 teaspoon Salt (or to taste)⠀
1/4 teaspoon Pepper (or to taste)⠀
1 Red bell pepper (diced)⠀
1 cup Salsa⠀
3/4 cup Cheddar cheese (shredded)⠀
10 Flour tortillas⠀
Instructions⠀

Start by cooking your bacon until crispy. I prefer baking over frying at 400 degrees for 10-15 minutes. ⠀
Crack eggs into a mixing bowl and whisk together. Add half and half, salt, and pepper. Whisk together until well combined. Cook and scramble eggs. Add diced bell pepper and cook until eggs are done. ⠀
Turn off heat and add salsa and cheese and mix until cheese is melted. Crumble bacon and add to eggs. Add a spoon full of the egg into each tortilla shell and roll. ⠀
Heat a skillet to medium/low and add burritos. Cook seal down until sealed then turn and allow to cook for another minute until toasted.⠀

Bacon Wrapped Scallops with Peach Thyme Mocktail
Serves 4

Bacon Wrapped Scallop Ingredients:
1lb Sea Scallops
1 pack W30 Approved Bacon
Wooden Skewers
Salt and Pepper
.
SOAK the skewers in water so they don’t burn as easily on the grill
SEASON the scallops with salt and pepper. You don’t need to use a lot of salt as there is salt in the bacon. 
WRAP the bacon around the scallops and then skewer the scallops with the wooden skewers
GRILL the kebabs on the grill for 1 minute on each side. Scallops cook quickly!

If you like your bacon a little more crispy, you can par cook your bacon in the oven on a sheet tray at 375F for about 6 minutes. Then remove, and do the same as above. 🥓🥓🥓

Lastly, for this picture we took our garlic aioli and blended it with some roasted red peppers we had lying around, then tossed some arugula in lemon juice and olive oil. Perfecto! .

1 part Peach-Pear La Croix
2 parts GT Dave’s Gingerade Kombucha
2-3 slices Fresh Peach, per drink
1 sprig Fresh Thyme as a garnish, per drink

This drink is very simple and refreshing. Ginger, peach and thyme are perfect combos. I lighten up the kombucha with the addition of peach-pear @lacroixwater. You can muddle the peaches and thyme prior to adding the liquid to really bring out their flavor. Pour over the La Croix and Kombucha, give it a swirl with the thyme sprig and enjoy! 🍑

I don't have cable so I have honestly never watched an entire show with Chip and Joanna (except for 10 minutes while waiting for a doctor's appointment). 🙈 I do however see a lot of amazing stuff about them online and through my friend's posts. I was convinced to check out @joannagaines newest cookbook. I made her overnight french toast for a Father's Day breakfast and Bevie's chocolate roll for a dessert for my dad this afternoon. I was excited to use my hand-painted flour sack towel to roll the cake and it worked perfectly! ¡El ARROZ y el PICADILLO a la mexicana hacen la mejor combinación del mundo!🍚😍
INGREDIENTES:
Para el arroz:
-	5 jitomate
-	1/4 de cebolla
-	1 diente de ajo
-	6 tazas de caldo de pollo
-	1 pizca de sal
-	suficiente aceite
-	3 tazas de arroz blanco Pijije enjuagado, remojado y escurrido
-	1 chile cuaresmeño
Para el picadillo:
-	5 jitomates
-	1/4 de cebolla
-	1 diente de ajo
-	1/3 de taza de caldo de pollo
-	1 cda de aceite
-	1 kilo de carne de res molida
-	1/2 cebolla picada
-	1/2 taza de chícharo
-	1/2 taza de zanahoria en cubitos
-	1/2 taza de cilantro picado
PREPARACIÓN:
1.	Para el arroz, licúa el jitomate con la cebolla, el ajo, una taza de caldo de pollo y sazona con sal. Reserva.
2.	Calienta el aceite en una olla a fuego medio y fríe el arroz Pijije moviendo de vez en cuando, cuidadosamente para no romperlo, hasta que esté doradito. Retira el exceso de aceite.
3.	Con ayuda de un colador, agrega el caldillo de jitomate y cocina por unos minutos. Vierte el resto del caldo, deja que suelte el hervor, agrega el chile y tapa. Cocina a fuego bajo alrededor de 30 minutos o hasta que se haya consumido el líquido y el arroz esté cocido.
4.	Retira del fuego y deja reposar con la tapa por 10 minutos. Enfría por completo.
5.	Para el picadillo: Licúa el jitomate, la cebolla, el ajo y el caldo de pollo. Cuela y reserva.
6.	Calienta el aceite en una sartén profunda a fuego medio, fríe la carne con la cebolla hasta que esté dorada. Vierte el caldillo de jitomate y hierve a fuego medio por 5 minutos, añade las verduras y cocina hasta que el líquido se consuma por completo. Sazona y enfría.
7.	Cubre un molde en forma de rosca con plástico antiadherente y agrega la mitad del arroz PijijCompacta muy bien con ayuda de una cuchara asegurándote de cubrir las orillas y no dejar ningún espacio vacío.
8.	Forma un surco en medio del arroz y rellena con el picadillo. Cubre con el resto del arroz y compacta muy bien. Refrigera por 2 horas.
9.	Desmolda la rosca y calienta antes de servir y decora con cilantro fresco.

I’ve recently found myself drooling over @leahitsines recipes as they all look and sound so delicious!
