Winter Salad with Tahini Maple Dressing and Warm Farro
This bejeweled salad is the perfect blend of tart and sweet with chewy farro nestled alongside vibrant greens and a nutty tahini dressing. It’s great for winter dinner parties and is a showstopper on the table top! Recipe below! 👇🏼
1 cup dry farro
8 cups mixed greens
1/2 cup pomegranate arils
1/2 cup dried cranberries
1/3 cup walnut halves
1/4 cup unsalted pumpkin seeds
For Tahini Maple Dressing
3 tbsp olive oil
2 tbsp apple cider vinegar
1 tbsp tahini
1 tsp maple syrup
Pinch of sea salt
Cook farro according to package directions. Set aside to cool slightly while making salad.
In a small mixing bowl combine ingredients for dressing and whisk until smooth. In a separate large bowl, combine greens, pomegranate, cranberries, pumpkin seeds and walnuts.
Pour dressing over salad and toss to coat. Spoon warm farro onto individual plates and top with salad.
Sneakers or heels? 👟or 👠???
I’m always amazed at how many people I see walking around NYC or SF in heels. I wouldn’t get around very far in anything other than sneakers and a select couple pairs of boots. Especially when I’m walking 2-3 miles per day. Maybe some are just born for walking in heels? While they seem to cause pain and potential injuries for me. 😬 Is it just me? 😆 •
Sometimes I consider dressing up a bit more on a regular basis. For example: I considered doing some outfit photo shoots while I was in NYC. But when I‘m wondering if I should try getting around in heels, I ask myself, “What do you care more about: looking stylish or your foot health?” And when I think about how I need to keep my feet in check so I can attend dance classes and teach Zumba, the decision becomes very easy. ☺️
I am in a super good mood today because I found out I GOT AN A on my genetics exam 2 nights ago, yesterday I only had one class and today I slept in then had this amazinggggggg breakfast 😍 •
2 slices of @danthebaker sun flax sourdough that I got from the farmers market, sooooo good!! My new love honestly.
To make: put diced tomatoes, spinach, bacon pieces (optional), onion, garlic, s&p, and olive oil in a skillet. Heat it until its all cooked and the spinach is wilted. Form into a oval shape. Cut out the middle of the bread, put a little butter or olive oil on it and place it over the tomatoes, spinach, etc. Once it starts to cook, pour a well beaten egg into the middle. When the egg & tomatoes start to cook together, add the middle section of bread back and flip to cook the other side.
Pair it with a side of grapes and enjoy the most delicious piece of toast you’ve ever had!! I can’t even explain how good this was🤤

I had to make one change to the recipe. I swapped out the Swerve for honey. I like honey and I had some available so I used it. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Here's the recipe.⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 oz cream cheese⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup Swerve (or honey)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 T butter⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup coconut oil melted and cooled⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 T orange zest (I didn't measure it. I just zested one orange). ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 T orange juice ( I didn't measure this either. I just juiced the orange that I zested and that seemed like enough. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup heavy cream⠀⠀⠀⠀⠀⠀⠀⠀⠀
Beat the cream cheese, sweetener and butter until combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Add the coconut oil, orange zest and orange juice and mix until combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Beat in the cream until combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
(Personally, I don't think it would be an issue if you just put all this in the bowl and beat it together at once. )⠀⠀⠀⠀⠀⠀⠀⠀⠀
Make into little balls or push into small molds and freeze for about an hour or so. I used a small scooper that is meant for making cookies to get the size in the picture.⠀⠀⠀⠀⠀⠀⠀⠀⠀
What I did for the chocolate was melt about 1/2 oz of baking chocolate in a dish with a small scoop (about 1 teaspoon) of coconut oil. When I poured the chocolate onto the frozen balls it hardened up. It was just like the magic shell stuff. I loved it!! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
