Low carb cornbread made with almond flour. Dice up half an onion, 2 jalapenos and cook until the onions just start to turn translucent. I used a splash of avocado oil. In a bowl add 2 cups almond flour, 1 tablespoon baking powder, 2 eggs, 3/4 cup unsweetened almonds milk, 1 cup shredded cheese. Toss is the onions and peppers and mix together. Salt to taste. I used all my bacon grease but 2 tablespoons works great here. Mix together and pour in your desired pan. We are traveling so I went with what we had available. Lol. Place in a 400 degree oven for 20 minutes then take out and put Pads of butter on it then toss back for roughly 10 minutes.
