Last night things got a little nutty around my household ... literally 😂... i knew I wanted to make some sort of no bake bar, granola bar ... but at the same time I noticed I needed to make a list of things I was short on or was out of completely! Ugh .. so it was time to improvise! But in the end ... everything turned out perfectly, and after taste testing one today... I convinced myself I needed a second😍😋lip smacking,crunchy, chewy treat
Here’s what I used⤵️
-1 cup raw pistachios -1cup raw almonds
-1/2 cup raw walnuts
-1/2 cup raw pecan halves
▪️toss in high powered blender or food processor.. i pulsed 3 or 4 times to ensure there still would be a good crunch!
In a large bowl, in addition to the chopped nuts I added
-1cup unsweetened coconut shreds
-1cup dried cranberries -1/2 tsp sea salt
-1 tsp cinnamon
▪️stirring to nicely combine... set aside
-1/4 cup organic coconut oil .. in a saucepan along with -1/4 cup of homemade peanut butter, and
-1/4 cup &2 Tbsp pure honey ... apply low heat whisking until melted and combined nicely -add 1 tsp of pure vanilla extract to the saucepan just prior to combining with you dry mixture.
Thoroughly mix together!
Line you square pan with parchment paper 8X8 for thicker bars or use a 9X9 ... if your mixture has cooled enough and won’t melt your chocolate chips 😂 add in 1/2 cup minis.... press very firmly & evenly into your pan, the tighter it’s packed the better! Top with plastic wrap ... I froze them over night. On a cutting board, using a sharp knife cut into bars ... after taste testing this afternoon I put them back into the freezer in a sealed container.
When you're craving something tasty & sweet at night, these frozen treats will do definitely do the trick!! Unsweetened almond milk
