#Rawgust day 14... this was probably my favourite meal yet! Raw mushroom curry based on @onegreenplanet’s recipe (see my stories) 
So simple... slice 3 cups mushrooms thinly, dice half onion and marinade in 1tbs soy sauce and 1tbs lemon juice for min 15 mins. 
Meanwhile blend 1/2 cup cashew nuts with 1tbs curry powder and other half of the onion. Serve mushroom mix into bowls and pour curry sauce over.  Fresh coriander as a garnish would’ve been amazing… but I didn’t have any! 👌🏻

➕➕INGREDIENTS
215g oats
70g cacao powder
1 teaspoon of baking powder
1/4 teaspoon of salt
90ml of maple syrup
60ml of non-dairy milk
60ml of apple sauce
60ml coconut oil (melted)
1 teaspoon of vanilla extract
100g blended raspberries
90g of whole raspberries
1 tablespoon of chia seeds
50g of dairy free dark chocolate chunks

⏩⏩Instruction

Preheat oven to 180°C/350°F. Grease a 8.5 x 8.5 inch (or 8 x 8 inch) tin with some coconut oil.
2. In one bowl, mix all of the dry ingredients.
3. In another bowl, mix all of the wet ingredients. This includes the chia seeds but not the blended or whole raspberries.
4. Combine wet and dry ingredients together by hand using a spoon or spatula.
5. Gently fold the blended raspberries and chocolate chunks into the mixture.
6. Fill the tin with the mixture.
7. Place the whole raspberries onto the mixture by gently pushing them into the surface. Display as you please.
8. Place into oven for 20 minutes. To check if they are cooked place a toothpick into the brownies and ensure it comes out clean.
9. Take out of oven and leave to cool for 30 minutes before cutting into squares.

Brownies can be stored in the fridge for up to 2 weeks (hats off to you if you can make them last that long) – or they can even be frozen.

Power matcha maca bites
1/2 cup cashews
1/2 cup walnuts
2 TBSP pumpkin seeds
2 Tbsp @artisanaorganics raw coconut butter
2 Tbsp @bulletproof brain octane (or use coconut oil)
1 scoop @mrm_usa vanilla bean plant based protein powder
1 Tbsp @navitasorganics maca powder
2 Tbsp @yoursuperfoods power matcha mix
1/4 cup @navitasorganics hemp seeds
1/4 cup filtered water (add more of mix is crumbly)
Pulse everything in your food processor and roll into balls. Cover with 1/2 Tbsp melted coconut oil and 2 Tbsp @artisanaorganics Coconut cacao bliss. Store in freezer and let sit for a few minutes before eating.

The weather here in Victoria is smokey AF and it's just been 'one of those days', so I felt like something fresh and light without using the stove-top. I call it the Raw Pad Thai bowl! It's super basic but packed with flavour!

Spiralize a zucchini and combine with bean sprouts, fresh cilantro and thai basil. Then whip together a simple peanut sauce: 1 tbsp of peanut butter, 1tsp of each tamari and sesame oil, 1/2 tsp ginger and garlic. Add water to thin if the sauce is too thick. Then mix up and add some chopped peanuts on top!

Raw Food Art 🥑 My body was seriously craving raw foods tonight, so I made a big salad! Not pictured is the raw cashew & jalapeño dressing that I drizzled over top! For me, these are the best meals because they 1) make me feel light and energized afterwards, 2) are full of healthy vitamins & minerals, and 3) don’t require much prep. I want to try eating more raw foods, especially after inspiration from peeps like @fruitformiles. As for now, I’ll be taking baby steps with salads like these 🥗 Have any tips for eating more raw foods? Please let me know!

Combining this two passions, I’m now recreating cooked and non vegan dishes I’ve tried during the years, but in a raw vegan version. 🤩 This dish calls Feijoada à Brasileira and it takes several meats and black beans in its original recipe. My raw creation doesn’t take any meat and it takes a different sprouted bean, which is much healthier than the black bean. Who can guess what does it take? 😉

➕➕INGREDIENTS
2 cups (140g) unsweetened shredded coconut
1/2 cup (100g) coconut cream
2 tbsp (40g) maple syrup
1 tsp mint extract
1/2 tsp spirulina
1/4 cup (30g) cacao nibs
1 cup (180g) chocolate chips
.
⏩⏩Instruction

In a food processor or blender, process the coconut until finely ground (but don’t go to long/high speed or it will turn into coconut butter).
Add the coconut cream, sweetener, mint extract, and spirulina. Process to form a sticky dough.
Add the cacao nibs, and blend briefly to mix them in.
Scoop out a heaping tablespoon of dough and shape into a cookie. Repeat until all the batter is used, you should get about 12 cookies. If it won’t stick together or is too soft to shape, chill for 10 minutes first.
Freeze for at least 15 minutes to harden.
Dip/coat in melted chocolate. Sprinkle with cacao nibs.
Refrigerate or freeze until firm. In the fridge the center will be soft like a peppermint patty, in the freezer it will be firm like a cookie.

А все тому, що було близько десятої ранку, а @b12candybar відкриваються о дванадцятій 😛
По дорозі згадала, що варто там скуштувати сирочок, смак якого оповитий легендами і ностальгією дитинства))

These kids devoured this half of the watermelon. It's going to be 31 today.
When it's hot like this for a lot of people the appetite goes down - which could result in heat stroke or exhaustion. If you are super thirsty you are already dehydrated. 
Keep hydrated by eating fruit. Filling your body with nutrients and water with every bite. 
FUN FACT - did you know you can eat the entire watermelon. The juicy red insides to the bright green rind. 
I haven't done this yet - but the white and rind contain the most amino acids 🍉🍉
