this was my #fullyraw din-din the other night! i incorporate #rawmeals every so often in my diet. i understand why it can be limiting and a hassle to #eatraw all the time. in my opinion though, it’s actually easier than having to fully cook/prepare food, hehe. and it’s so convenient to #mealprep with raw items. i always believed that a little bit of everything goes a long way.
In Bulgaria there is a cold yoghurt soup that is traditionally consumed in the summer. This one is made vegan style with hemp milk. It also contains small pieces of cucumber, dill and fresh garlic - simply divine! We added some pink tomatoes sprinkled with dried wild garlic and savoury topped with home grown sunflower shoots and avocado. Dinner prep time - 5 minutes! 🤗

Can you believe it? It’s RAW Lasagna! And oh my...so good! Tasty, juicy and packed with flavours which makes you forget all about the meat and pasta. It’s filling and fresh perfect for a summer dinner. You don’t need to tell your guests that’s it’s raw vegan, just serve it and see the reactions! Raw tahini pesto noodle salad.
Dressing: 2 tbsp raw unhulled organic tahini, 2 cloves raw garlic, handful of fresh basil (preferably freshly picked from your raised bed organic garden), almond milk, about half of a raw courgette (zucchini), juice of half a lemon, a big chunk of iceberg lettuce, salt, a couple tbsp nutritional yeast, a medjool date, all in a high speed blender until creamy and thicc.
Spiralize a large sweet potato, cucumber, rest of the courgette, shave/grate some carrot, chuck in some beansprouts, corn, chopped cabbage and iceberg, fresh yellow pepper, maybe some raw seeds and raisins, then pour over all that good dressing, sprinkle with nutritional yeast and salt and devour.
Eat enough, eat well, eat from the earth.
Well, Steve may not want to kiss me tonight, but this pesto was so flavorful 😂 check my story for how I made it. Zoodles under that basil cashew pesto, topped with sun dried tomatoes. Day 2 of my restart and surprisingly I've been all raw...never have I attempted it. Feeling great so far tho, and summer is the perfect time to try raw foods. ☉🍋🍉🍓
