Just a couple of months ago, I was following a mostly raw vegan fruitarian lifestyle. I was looking to “detox” and “reset” my system. I’ve followed all sorts of different diets in my lifetime, trying to stay tuned into my body’s signals as I go, but sometimes getting wrapped up in dogma put forth by adherents to various lifestyles. . While doing the fruitarian thing, I was beset with digestive issues that had me unable to eat much of anything for most of the month of November. I had a similar episode several years ago, and both times, one of the main ways that I stabilized my system was to follow the #gapsdiet , which has much overlap with the #nourishingtraditions #ancestral ways of eating. I still have some #dysbiosis to address, but it’s amazing how much better I feel after doing a complete 180 with my diet and embracing the nourishment of #meatstocks , #culturedveggies , and #rawdairy . . I’ve been getting into sourcing my food directly from farms, which just makes me feel happy. I’ve gotten a little excited, so I decided to slow down, get organized, and make a #freezerinventory and eventual #mealplan to stay on top of things. . It just feels right to be following an #ancestral way of eating. I’m looking forward to studying with the #nutritionaltherapyassociation starting in February to go deeper into the science behind it all and to give myself more opportunities to help others moving forward. I call meals like this "Wise Traditions Keto". It involves appling @westonaprice principles to Keto. I personally cannot handle many foods that are allowed on a #wisetraditions diet. My insulin and blood sugar are easily triggered into overdrive. This wrap was made with pork rinds, pastured egg and cream cheese, the filing is grassfed local beef with added chicken liver, organic lettuce, red onion, avocado and some cheese I made from soured raw milk. Well it's only taken 11 months and countless hours of labor by my self and volunteers, but if I drive a state away and join a club, I can buy real milk. This price list cemented my resolve and I got somewhat lucky- although I was afraid to ask the cost. Who can be joining co-ops all the time that is freaking nomadic?! This is insanity- there are cows, goats, and milch sheep everywhere- but pastured raw milk where the calves are not kidnapped- I don't want to drink a mother's anguish!- It's nigh impossible, even with resources! The next vegan who whinges online about how 'hard' it is to find their nutritionally void cattle fodder, I will smell it and FIND YOU. 🤬 WHY AREN'T YOU HELPING ME FIGHT TO ABOLISH FACTORY FAR- oh YEAH, it's 'a way of life', and doesn't have JACK SHIT to do with prevention of animal cruelty, GOT IT. 😑 Ugh! I’m becoming an expert ice cream maker! Since buying a simple ice cream maker, and exploring the health benefits of raw, unpasteurised dairy, I’m making the most wonderfully healing concoctions. I love this because so often things that heal us taste like medicine, whereas this taste like heaven! * * The more I read about raw dairy, the more I recognise how much of a conspiracy there has been around government regulation of this amazing superfood! Read up, google and learn... * * * To make this ice cream: 1 litre unpasteurised raw cream 4-6 egg yolks from organic pastured grain free eggs. 250g organic strawberries 🍓 blended to purée 3tbsp rose 🌹 petals soaked for an hour prior to use. Tbsp sherry or clear flavourless alcohol (stops ice cream freezing into a solid block) Tiny pinch good salt 2 drops stevia Grated zest of 1 large organic orange 🍊 * Whisk egg yolks until pale and ribbony, then slowly add cream and whisk in. Add the water from soaked rose petals (about 2-3 tbsp) and your puréed strawberry, orange zest, salt and stevia. WhiWhisk all together well, and then pour into your ice cream maker to churn until the mixture thickens, according to the manufacturers instructions. Pour into tubs and freeze overnight, then enjoy any time of day or night 😋 #yourewelcome

This stuff is the business! I’ve never been an ice cream fan until I discovered raw milk and raw cream. Unpasteurised and in it’s completely natural state, raw milk is absolutely packed with live digestive enzymes and great microbiome supporting bacteria. * * * This one is made with a subtle flavouring of organic cacao powder, nutmeg and vanilla and it tastes incredible! * * To make: In a bowl mix 4 to 6 organic pastured truly free range egg yolks until pale and ribbony. Add a teaspoon of vanilla extract, a tablespoon of flavourless alcohol (stops the ice cream freezing solid), a drop or two of Stevia, and 2 cups of raw unpasteurised milk. Mix well, and then add your flavouring of choice. If you use pureed fruit, reduce slightly the amount of milk in accordance. I also added about 250 ml of thick unpasteurised grass fed cream from a local micro diary I have visited. Place all in your ice cream maker and follow user instructions. There are ways you can make this without an ice cream maker, but to be honest it was so complicated I just decided to invest in a basic model, you can pick one up for about £25 in your local store. Everybody knows about sugo bolognese. But have you ever had sugo genovese? It’s a slow-cooked (up to 6 hours!), rich meat sauce consisting of seared cheap cuts of beef, a little garlic, wine, mirepoix, and loads of diced onions. You don’t add any other liquid other than the wine; the onions cook down and release their juices, essentially becoming the sauce. There are no tomatoes added to this sauce traditionally, but, you can add some tomato paste if you like. I used a mix of beef and pork on the bone to add extra collagen and thickness to the sauce. It’s sooo good. Traditionally it is served with pecorino romano, so I loaded mine with that and just added a few peas to my bowl for a pop of green. Insomnia led to some homesteading research of sorts at about 2 a.m. which then led to a burst of inspiration, resulting in a twinge if sadness that we aren’t in our own home. (Permit acquired though! And ground breaking within days!) I’m reminding myself that all the things I’m feeling jazzed about are all the reasons we are building in the first place, which is good to stay focus. Mainly, we are building to make hospitality even more functional. Second to that, my sweet husband had greatly taken into account my domestic strengths and desires in a home. 🐓 🍅 🍞 🐄 🐐 🥒🍒🥦 There’s so many inspirational homemaking quotes I have rolling around in my head, but mainly I’m thinking about home as the place where God has designed specific good works for me as a woman to walk in and I am so, so thankful that includes creative and foodie work that I get to do with my hands. ❤️ As Harjo wrote, “The world begins at the kitchen table.” If we think in terms of the Great Commission and evangelism around cinnamon rolls and pot roasts, then you can say, “Amen!” and roll up your sleeves to begin some culture creating. Today this desire gave birth to several jars of raw milk yogurt, sourdough, a few dozen sugar cookies, and the early stages of meatball barley stew. These odd lookin’ curdly things in my hand are kefir grains 🤩 Did you know... that you can dehydrate your kefir grains? It's true.. you can. But why would you need to? ✨ When the weather is warmer, kefir grains can ferment rather quickly. If you don't have anyone to "share" your grains with, you'll eventually find yourself with an overload of grains. ✨ Every time we head out of town, I put my grains with raw milk in the fridge as it slows down production. But every now & then I'll dehydrate my grains. Milk kefir grains need to be rinsed with milk first; then lay them on a flat plate or cookie sheet loosely covered. Keep out at room temp for 4-5 days, turning after 2 days. ✨ Or, lay them on your dehydrator sheets (ParaFlexx sheets work well if you have an Excalibur) and dehydrate on the lowest setting until they are dry. Once dry, you'll put them in a jar with powdered milk and store in the freezer. ✨ I love kefir and I make it daily. I use it in sourdough bread, potato salad, to make quark cheese, in milkshakes, smoothies.. it's the best... ❤️🤩🙌👏👍 But kefir can be tricky when it starts getting cooler in the fall/winter. Earlier this week, I went to my favorite raw dairy farm and picked up super fresh eggs, heavy cream, and whole milk with THIS in mind. I often make a seriously alcoholic version reputed to be George Washington's personal favorite, but this non-alcoholic batch is for a special early Christmas celebration for friends who are going to be away over the holidays. We'll be bringing some fun adds for those who choose to spike 😋 . . The recipe is super easy: 6 eggs, 1 cup granulated pure organic cane sugar, 2 cups heavy cream, 2 cups milk, 1 tablespoon organic vanilla extract, and 1/4 teaspoon freshly ground organic nutmeg (with more to sprinkle on each serving if desired). Let’s get real about kefir: Kefir grains love consistency! This is generally what I see when someone embarks on their kefir making journey: They make it a few times, put the grains in fridge and forget about it for months. Then when they try again, it doesn’t respond like it was before. Acquiring a habit and consistency is important if you’re going to be a successful kefir maker. That said, while kefir making is pretty much a quick morning and night ritual for me, there are often times when life gets in the way and I stick it in my fridge for a few days, before straining the grains out. In fact, I have been guilty of putting finished kefir in fridge with grains in it and going on vacation. When I return, I’m happy to see that my grains still love me. What’s my point? I suppose it is to say, if you’re more consistent than not, your grains will be forgiving and resilient when life happens and you neglect them a bit. More kefir information on website. This is one of the most healing and delicious things I’ve tasted in quite some time! I’ve been watching a lot of documentaries, reading, discussing, and learning about unpasteurised raw milk and raw milk products, including fermented drinks like kefir and clabbered milk. ..let's talk about dairy.. raw dairy.. . ..due to my pictures you see that I don't consume a lot of dairy.. that's mainly because it's hard to find sugar free or raw dairy over here.. of course aged cheeses are easy to find, but also the only diary product I never liked (I know I am a Swiss, but that's how it is).. It’s such a beautiful and touching animated film without words and capturing music based on the children’s books. It’s my favorite holiday movie. —— We watched this while sipping on hot chocolate which has been my addiction lately - made so simply with 3 ingredients - raw local whole milk warmed with raw cacao and a touch of maple syrup. Just stir as you warm lightly. Then, the decadent touch is using raw cream and maple to whip up whip cream for the top which melts into it 🙌🏻🙌🏻🙌🏻. Too good. It’s a beautiful snowy morning here on the farm, and I’m remembering those lush green pastures of spring and summer. I can remember cows chewing on fresh shoots of grass, making squeaky grinding sounds in perfect rhythm. Our jersey cows all come from A2A2 New Zealand genetics, which helps them to be more efficient on pasture. New Zealand jersey cows have been bred to be grass-fed animals, and are adapted to produce beautiful creamy milk on a grain-free diet while maintaining excellent weight. American jersey cows, on the other hand, tend to be dependent on grain in their diet. They produce a lot more milk, but their body condition suffers if they don’t get grained. They’ve been designed to produce more milk than is sustainable for their own health, and depend on grain for the extra calories. There are certain lines of American jerseys that can be healthy on a 100% grass diet, but these lines are much more rare than the commercial jersey cows, which dominate the genetic pool. Even though my NZ jerseys only produce a few gallons a day, they make up for it by being hardy and easy keepers with tons of personality. All of our cows produce milk with A2A2 beta casein protein, which has been studied and shown to be more digestible than the A1 beta casein proteins found in milk from most American milk cows. 🥪Grilled Sourdough Tuna Melt...I think u can see that this is pretty much perfection...and it hit the SPOT! I haven't had a tuna sandwich in sooooo long and the hubs actually LOVES them so it was such a treat for the 2 of us! 🥪 I did not plan on picking up another sourdough bread to try but we stopped at the booth at the Farmer's Market and they had samples the hubs tried. He LOVED the bread and thought I should give it a whirl so I did! I'm so glad I did since reactions to this specific sourdough have been super minimal, almost none at all!!! It seriously frustrates me when people make sweeping statements about the unhealthy effects of meat and dairy. How meat and dairy is grown and processed completely changes the way that it effects your body. It is like talking about two completely different foods. Factory farmed, grain fed, antibiotic, hormone filled and GMO meat causes terrible inflammation in the body and wreaks havoc on the gut. Similarly, severely pasteurized and processed dairy is linked to a number of negative health outcomes. But when we are talking about pasture raised, grass fed, naturally raised meat, and raw, unprocessed dairy, it is a completely different food we are talking about. It is chock full of healthy fats, proteins, high in minerals and vitamins, and full of beneficial bacteria, incredibly soothing and healing to the gut lining. I get all my meat and raw dairy from wonderful local farms. And my health has benefited amazingly from it! What have I got tucked under those eggs? Well besides some tomato and some sprouted sourdough from @traderjoes , I’ve got RAW CREAM CHEESE! I was lucky enough to grab some through a CSA I have with a local farm. . If you’ve never tried raw cream cheese, you must! It is unbelievably rich and creamy and it is loaded with all of the healthy, nourishing fats that the Standard American Diet (SAD) is so badly lacking. The combo of those fats with the fats from my farm raised pastured eggs make for a nutrient packed morning for me 😁 . One benefit of raw dairy? Many people who are lactose intolerant can consume raw dairy with no problems! When food is in its natural state, our bodies can handle them much better than when they’ve been processed. . The fastest baked potatoes from the Instant Pot. Today ours were loaded with pastured butter, raw cheese, pastured sausage from a local farmer, sour cream and herbs. 😋
Ok, after a long Thanksgiving weekend of treats, my body is craving its healthy routine again. I’m starting today off with some pastured, organic, farm-fresh eggs, a honey crisp apple with apple pie spice (I make my own, keep your eye on future posts for the recipe), and some waffle iron hash browns! The hash browns may have taken a little while, but hey - it’s Sunday breakfast time and nothing makes me happier than being in the kitchen on Sunday mornings! Want to give these a try? Here’s the recipe: . -1 potato, grated -1 egg -1/4 cup local, raw Greek yogurt (go grass fed from the grocery store if you don’t have access to raw dairy) -1 chopped green onion -salt and pepper to taste -red pepper flakes if you’re feeling adventurous 😉 . Grate the potato and place on a rag that is draped over a mixing bowl. Sprinkle the grated potato with salt, mix, and let sit for 20 minutes. When time is up, wring out as much moisture from the potatoes as you can, discarding the water. Place the potatoes (now a little drier) in the mixing bowl with all other ingredients and stir until well combined. Get your waffle iron hot and put some avocado oil on it. Cook the hash-brown until the waffle says it’s done, and TA-DA! A delicious breakfast side! . As always, feel free to play around with this recipe. Prefer sweet potatoes? Try those!
