When you want the flavours of a Nanaimo bar but don't want all the sugar (and also to not make them or go out to buy one)... you make a WFPB Nanaimo pudding! 😂
This iteration is not perfect but it hit the spot for today! Makes 2 small servings (or really 1 regular serving, you know what's up).
🌰 1/2 #avocado
🌰 1/4 cup coconut water
🌰 1/2 cup coconut milk
🌰 1-2 dates
🌰 1 tsp mint matcha powder
🌰 2 tsp #rawcacao powder
🌰 1 tsp cacao nibs
🌰 2 Tbsp unsweetened shredded coconut + more for sprinkling
🌰 2 Tbsp chopped walnuts for sprinkling
Blend all ingredients except toppings. Pour the pudding into (a) bowl(s) and sprinkle on toppings. 😋 If you like it thicker, add some ground chia seeds to the mix and let it stand a few minutes before serving.

This is gluten free & dairy free, and very little sugar.
I always pull my recipes off of a site called all recipes.com, then I substitute everything! Gluten-free flour for flour, almond milk for milk, coconut sugar for sugar, and are use only half the sugar of what the recipe calls for!
I made the frosting by whipping margarine, then adding icing sugar, and cocoa powder ✌🏼 Extra gourmet touch? Add 1 drop Peppermint in the frosting or 4 drops to the cake batter.

WTF?! Yes, that’s a chocolate pudding. I made it last night. It was delicious, and Keto😋 .
I had an overripe avocado so I threw it in the food processor with some of the coconut water drained off a can of coconut milk, added a few drops of vanilla, a few drops of peppermint oil, powdered raw cacao and decided to try Swerve, which is an artificial sweetener made of erythritol from non GMO sources.
Normally I never use artificial anything, always using honey or maple syrup etc if I am sweetening the rare thing (or dates or overripe bananas), but I read up on this stuff and thought I would give it a try. .
It certainly doesn’t have the bitter aftertaste of stevia. From Dr Axe, “...the safety profile of Swerve is relatively good, and there are no standout concerns...all in all there is nothing wrong with using it for an occasional sweet treat”. .
OCCASIONAL....See that?? That’s the important thing to note here. Occasional does not mean 1)once a day 2)every other day 3)every week. It means OCCASIONAL. Like once in a blue moon...you buy a bag and it sits in your cupboard until it goes hard and you find it 6 months later...THAT is occasional.
So yes, I made a pudding. If I had banana in the house or dates I would have used those to add sweetness because that’s enough for me. I used barely a 1/2 tbsp of Swerve since I wanted to try it. This was a nice treat! I can’t remember the last time I ate a dessert...it’s been months!!!

What’s the difference?
Cocoa - is Cacao that is processed by heating it. Through this process a lot of the antioxidants that make cacao so good for us is lost.
Cacao - is the natural bean that chocolate comes from.
Now your girl love chocolate and I also like being healthy. I like to buy dark chocolate but not all is created equal. You want to buy chocolate that has at least 70% Cacao, anything less and you aren’t really getting the health benefits you think you might be getting. Also, when the percentage isn’t labeled on the package then look at the ingredients to see if cacao is even being used.
