A lot of my flavor profile comes from childhood memories of mama koo’s cooking. I ate this particular radish kimchi with EVERYTHING as a kid. My favorite was to roll it into a slice of ham and eat at least 10 of them, probably more. Yesterday night, mom called me. She said ,“I’m making kimchi at the moment. Would you like to have your vegan kimchi? You don’t eat kimchi since you go to vegan so I am sad.” I said, “why not? I really wanna have!!!” ...
She called again. “Did you see the pic that I sent? I’ve changed all the disposable gloves and used different container. I packed it separately perfectly.”

My own version of Kimchi Fried Rice and Yachaejeon 야채전 (Vegetable Pancake) for breakfast. I used Kkakdugi 깍두기 (Cubed Radish Kimchi) because I don't have the cabbage Kimchi. Very delicious and vegan friendly 🌿

Left over rice
Korean roasted seaweed
Cheddar and mozzarella cheese (optional)
Brown sugar (optional)
Carrot (cut into strips)
Sliced red bell pepper
Sliced green chilli
Green chilli (optional)
