• 1/4 cup coconut oil
• 1/4 cup pure maple syrup/honey
• 1/3 cup cacao powder
• 1/2 cup almond butter or nut/seed butter of choice
• 1/2 cup cooked quinoa
• 1/2 cup quinoa flakes
• 1/2 cup coconut flakes
• Coarse sea salt for sprinkling (optional, but recommended!)

Instructions:

➡️ Line baking sheet with parchment paper and set aside.
➡️ In a small sauce pan over medium, melt together coconut oil, syrup and cacao powder. Whisk until combined. Add the almond butter and stir again until smooth.
➡️ Remove saucepan from the heat and fold in the quinoa, quinoa flakes and coconut flakes.
➡️ Using a cookie scoop, drop the mixture onto the prepared baking sheet, shaping slightly with your hands if desired. Sprinkle with sea salt and place in the freezer to set for about 30 minutes.
➡️ Store in an airtight container in the freezer for best results, but can also be stored in the fridge (they'll just be a lot softer!).

Non avevo mai provato questa tipologia di quinoa e devo dire che è davvero buona.
L'unica cosa che mancava a questo piatto erano dei cubetti di feta...ma era comunque gustoso e saporito.

It's a simple quinoa porrige: last night's quinoa + 1/4 cup of milk, half an over-ripe banana, a spoon of dried coconut, a spoon of superseed mix and a dusting of cinnamon.  Put them all into a pot and heat for 3min. Yummilicious!

I like to stir fry my veggies in a tiny bit of coconut oil, turmeric & pepper, garlic powder and sea salt. Tahini is my go to dressing. I love it's nutty clean taste and it's a super healthy fat!

🥣Quinoa pudding(#quinua) 
Directo del libro que @gabriel131169 me trajo de Perú, pero adaptado a nuestro clásico argentino. 🥣Muy buena textura, untuoso, perfecto cómo postre o desayuno. ¡O a la hora que te den ganas!

Pudding de quinoa
------------------------------
1/2 taza de quinoa lavada cruda
2 tazas de leche
3/4 taza de azúcar
1 yema
2 tazas de agua
canela
vainilla

1. Hervir el agua, la canela y la quinoa por media hora. 
2. Colar y volver a poner la quinoa blanda eb la olla junto con la leche,  el azúcar,  la vainilla y la yema batida. 
3. Cocinar a fuego lento hasta conseguir una textura suave. 
De puede servir tibio o frío,  espolvoreado con canela. 🌱🌱🌱🌱🌱🌱🌱🌱🌱🌱
Pueden reemplazar el azúcar por otros endulzantes como stevia o sucralosa para una versión #sugarfree y la leche puede ser vegetal. .

🥗 Southwestern Quinoa Salad
⏲ Under 30 mins | Serves 4
Enjoying my Tuesday evening with this delicious, protein filled salad! Being a vegetarian, I have to find foods that are healthy & filling for me & this salad has it all! 🤤
⠀⠀⠀⠀⠀⠀⠀⠀⠀
What’s in my bowl 👇🏼
15 oz Black beans
1 cup Corn
3 Roma tomatoes
1 cup Quinoa
2 cup Vegetable broth
4 cloves Garlic
1 Jalapeño
1 Serrano Pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Finely chop garlic, jalapeño & serrano pepper & cook in avocado oil. Add black beans, corn, tomatoes, quinoa, vegetable broth. Season with chili powder, cumin, salt & pepper. Mix & cover pan. Let simmer for 15-20 mins (until quinoa is cooked). Serve & top with cubed avocado, lemon juice, fresh cilantro, sesame seeds.

Quinoa is a super food 💪🏼 & these delicious, Mexican-style stuffed peppers are one of my favorites! They’re spicy, healthy, packed with protein, & easy to make

Recipe 📝 
1 cup quinoa rice, cooked in 2 cups vegetable broth for about 20 mins or until fluffy
Preheat oven to 375 degrees & grease a 9x13 baking dish
Take 4 large red, green & orange bell peppers, halved & brush with olive or avocado oil 
Mix together-
Cooked quinoa
1/2 cup salsa (I use @heb hot)
2 tsp chili powder & garlic powder
15 oz can of black beans, drained
1 cup sweet corn
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Stuff peppers with mixture, sprinkle salt & pepper to taste.
Cover dish with foil and bake for 30 mins.
Remove foil & bake at 400 degrees for another 15-20 mins
Serve with desired toppings- 1 cubed avocado, fresh lime juice, hot sauce, fresh cilantro, diced onion.
