With the crazy weather we have had in Melbourne i really felt like something fresh.
I went with a faithful Avocado Smash. The avocado was really fresh and it went down a treat. I also loved the added quinoa, it brings a something else to the dish but goes together well however the poached eggs were a tad over done and I didn’t get the surprise run I was hoping for.
It was still a delight, filling but light lunch and I’ll be back again.
Staff are always friendly and offer a smile here, it makes the experience that little bit more pleasant.
What's for dinner at our house 😂 my husband has given up on refusing to eat my healthy food. Probably because he's too tired to make himself anything else. And now he even enjoys it! 😏 These are brown rice, quinoa and lentil patties with Cajun tofu and salad on the side 😊 husband has a slice of flax and quinoa toast too.
Who doesn't love a good pun?! 🤣 Quinoa is one of the few grains that are a complete protein. Complete proteins contain all nine essential building blocks of protein and it can be a great food to choose if you are watching your blood sugar. High in fiber and protein, it is a low glycemic load food and won’t cause a dramatic shift in blood sugar. It can also support lowering your cholesterol and is a good source of copper and magnesium, both of which are supportive for blood and blood vessel health. 💪⠀
Does your quinoa often turn out too soggy or wet to be fluffy like you see on top of salads? Don’t forget to let your quinoa rest! After your strain and drain your quinoa, put it back into the pot you cooked it in and give it a 15 minute nap.⠀

Chicken and Butternut Squash Stew with Quinoa
For the cold nights after long work days. When all you need is a big bowl of comfort.
Start with toasting some curry, smoked paprika and cinnamon. Then remove from pot. Saute onions and garlic then add chicken breast. Sear and then add chicken stock. Boil breast until just done and remove from the pot. Add butternut squash, red pepper, apple cider vinegar, toasted spices, parsley, and red pepper flakes. Simmer until squash is soft. Add quinoa 20 minutes before the stew is done. When squash is soft mash some and leaves the rest in chunks. Shread the chicken and add back to the pot.

My latest creation in an attempt to get my greens in....steamed then lightly stir fried veggie mix with quinoa cooked in Pacific mushroom broth.
The veggies are lots of Swiss chard, kale, broccoli, mushrooms, and red cabbage. I used avocado oil and a bit of mushroom broth to cook it all together then mixed in the quinoa. For seasoning, I used salt, Frontier Co-Op Herbs of Italy, 3 garlic cloves, and a squeeze of Meyer lemon once on the plate.

I normally don't take, let alone publish, pictures of food but I loved the colours of this quinoa soup and its bowl VS the aguayo VS the lake.
An aguayo is a very colourful cloth that is especially used in the Andean Altiplano by Indigenous women to carry goods - and very often, their babies. In some cases, like on this picture, it's used as a tablecloth.
Where do you get your protein?! 🌱
Not everyone studies nutrition or health so let's bear with the question, right?! Plant based protein is healthier in comparison to animal protein which contains cholesterol and saturated fats. Most people are eating too much of one and not the other leading to the rise in diet related illnesses.
This isn't a push for you to go vegan if you aren't already but I do want to push you to eat more plants. 🌱
