Mandarin and blueberry bircher 🍊
I've been trying out some variations on the traditional bircher recipe and given my slight obsession for tinned mandarins, I thought this version was pretty darn good. Make it this evening and devour it tomorrow morning for a healthy and tasty breakfast treat. It's soooo easy to make 😀💫
~
Ingredients:
- 1 apple, grated
- 100g rolled oats
- 300g tinned mandarin segments
- Large handful of blueberries
- 2 tbsp chia seeds
- 400ml coconut milk
- 1 tsp maple syrup
- 3 tbsp Greek yogurt
~
Directions:
🥄 Add all ingredients into a bowl and stir well.
🥄 Put the mixture into an airtight jar or container and pop in the fridge overnight, or at least 4 hours. Enjoy! 🥄 (Store in the fridge for up to 3 days)

On parle souvent d'avoir des ustensiles et une crème bien froids pour réussir une Chantilly, mais vous avez beau faire tout correctement et elle retombe.
On ne parle pas assez de la qualité et de la marque de la crème. C'est primordial ! Pour en avoir testé plusieurs, je conseille toujours la crème entière de Normandie @elleetvire à 30%. On la trouve partout et elle tient très bien. Et pour de meilleurs résultats : la @elleetvire professionnel à 35%. Il est précisé sur l'emballage qu'elle n'est pas vraiment adaptée à la crème fouettée, pourtant elle est parfaite, pour une tenue impeccable (on dirait une pub de cosmétiques !).
Je ne suis pas sponsorisée par Elle et Vire, mais je n'ai pas trouvé mieux que leurs crèmes.

Doodhi na muthiya - it's a Gujrati dish made from wheat/mix flour, cooked rice, spices and bottle-gourd/methi leaves. You can steam or deep fry depending on ur mood. Here I have used bottle-gourd and steamed muthiya and added tadka and seasame seed's for crunch ! You can have them with curd or kadhi or just add a little lemon juice and have it..it taste yumm !! It's delicious, healthy and nutritious😋😋😋😋😋😋😋 We prefer to have them in lunch as they are quite filling.

Klein und bunt sind sie mit einem Biss im Mund verschwunden - zumindest ist das bei mir so 😅 Was viele glauben: Macarons seien eine französische Erfindung 🇫🇷. Dem ist aber nicht so. Die ersten Macarons entstanden im 16. Jahrhundert in Italien 🇮🇹. Es handelte sich dabei um einfache Kekse 🍪ohne Füllung, bestehend aus Mandelpulver, Zucker und Eiweiß. Da sie somit vollständig ohne Mehl hergestellt werden, sind sie die perfekte Nascherei für Menschen mit einer Glutenunverträglichkeit. Nur...was ist mit dem Zucker🤷♀ ?? Ich persönlich ernähre mich seit geraumer Zeit sehr zuckerarm bzw. Industriezucker vermeide ich fast gänzlich. Ich suche mir stattdessen Alternativen wie Agavendicksaft oder Kokosblütenzucker und erfreulicher Weise schmecken meiner Familie 👨‍👧‍👦 auch meine Kreationen, bei denen ich, was das die Art und Weise des Süßens angeht, meinem Bauchgefühl folge 🙏. ⠀

Mein Tipp: Schau´ auch hier einfach, was zu dir und deiner Lebensweise passt (insofern du keine Unverträglichkeiten hast) und vertraue deiner Intuition 👍. Ich selbst kann nur bestätigen, dass der Verzicht auf Industriezucker mir nachhaltig mehr Energie und Kraft gegeben hat 💫. ⠀

Zu guter Letzt noch eine lustige Legende zu den Macaraons: Die runde Form soll auf den Mönch 👼von Cormery zurückzuführen sein, der den Mandelteig mit nacktem Oberkörper zu schlagen pflegte. Eines Tages brach er vor Erschöpfung bei der Arbeit zusammen und hinterließ mit seinem Bauchnabel einen kreisrunden Abdruck im Teig. Bon appetit! 😆⠀

I have never tried making dosa at home because I was never sure about batter, whether I would be able to pull it out correct or not and so many other reasons. While going through oats recipes I came across to Oats Dosa so I tried it for the first time few days back and since then I am making it almost everyday. Hot, crispy and quick-easy dish to relish. Just combined grinded oats with rice flour, curd, chillies, onion, salt, cumin and water to make flowing batter and enjoy this delicious dosas✌️💕

Babe made the tragic accident of buying me full sodium soy sauce... I’m a green cap low sodium kinda girl, it’s taking some adjustments to avoid super salty sauces now. Still trying to perfect the recipe for this glaze, in the meantime, drool at this shot 🤤 — How do you adjust for the normal sodium red cap soy sauce?
🍂 Finally Fall!! 🍂So of course I had to make my black eye pea chili with Mexican cornbread! Takes 30 minutes and we can eat on it all week! 
Recipe:
1 pound turkey sausage
1/2 onion 
1/2 bell pepper
4 cans black eye peas 
2 cans chili style Rotel
1 teaspoon chopped garlic
1-2 teaspoons chili powder
Salt and pepper 
Brown turkey sausage! Chop onion and bell pepper and microwave for 4 minutes, add to sausage. Add peas, rotel, and seasonings and cook for 30 minutes! 
If you like it spicier then add more chili powder and a little cayenne! I make mine and then remove some for Thomas because I like mine way spicer than he does! We like to make frito pies, and top with sour cream and cheese! 
For the cornbread I just use Martha White brand (I think that’s it 🤷🏻‍♀️) Mexican style! Just add cream corn and cheese. YUM!

*around 225 g of minced chicken *chicken seasoning: salt, pepper, parsley and a garlic clove with 2 tbs of olive oil *3 small zucchini (use vegetable peeler to make very thin slices or use the special zoodles maker if you have it😊)
* around 1 cup of sliced mushrooms * 1 tbs of tahini sauce 
To make this awesome meal:
*season the chicken mince and divide the chicken into 6 balls and cook over high heat for 2-3 min each side *cook the veggies with some salt, pepper and olive oil till lightly browned *in a small bowl mix in the tahini sauce with 1/2 tsp of apple cider vinegar some salt and pepper and water as needed. *in a plate add the mushrooms zoodles and the chicken kofta then drizzle the tahini sauce on top. Enjoy 😊

*225 جرام مفرومة دجاج
*تتبيلة الدجاج: ملح، فلفل، كزبره،فص توم معروس و ملعقتين كبيرة زيت زيتون * 3 كوسات صغيرة ( نعملها شرايح رفيعه بالقشارة او الاداه الخاصه الي تعمل زودلز اذا متوفرة عندكم😊)
*حوالي 1 كوب شرايح مشروم * ملعقة كبيرة طحينه
عشان نسوي الاكلة اللذيذة دي: *نتبل المفرومة ونقسمها ل 6 كرات متساوية ونطبخها  في صاج على حراره عالية لمدة 2-3 دقايق على كل جنب
*نطبخ الخضار في صاج اخر ونضيف لها ملح وفلفل وشوية زيت زيتون *في زبدية نخلط ملعقة الطحينة مع 1/2 ملعقة صغيرة خل تفاح ورشة ملح وفلفل اسود مع موية حسب الحاجه

Fall came in full swing and everyone is happy. I’m on the edge. I love it because it’s prepping for Christmas but also dread it because I know winter is coming. 🤷🏽‍♀️

This is a perfect dessert for cooler weather because it’s all warm and gooey. It reminds me of cobbler but like a cheap easy way. So easy that my 8 year old is the one to cook it.  There’s a ton of these recipes out there using different fruits and personal touches. My 8yr old keeps it simple.

Strawberry Dump Cake
-1 Box white cake mix
-Frozen strawberries (enough to fill the bottom of a baking dish)
-1 stick butter, melted
Pour frozen strawberries to cover bottom baking dish. Spread white cake mix over the strawberries as evenly as possible. Pour butter to cover the white cake mix, sometimes I use an extra stick of butter. Bake at 350 degrees for 45mins.

Last night was one of those crazy nights. We had been doing gardening and rearranging furniture at home all morning, the house was a mess and we had rushed out to the skatepark to meet a friend and hadn’t done any prep for dinner. We stayed WAY longer than expected and cruised through the door just before 6pm with 2 hangry children and no plan. 
I started looking at our UberEats options, having completely forgotten it was a public holiday!! Argh!! None of our “safe” places were open, 🤨 I didn’t feel like cooking and the kids were practically eating the kitchen bench crying for food... ok. OK!!! challenge accepted. 
I quickly fried up 500g of turkey mince and threw a bunch of vegetables into the food processor (to cut down the chopping time), I had pumpkin, zucchini, onion, celery, kale, carrot and capsicum. I threw it all into the pot and topped with 2 cups of bone broth. It boiled on low for about 15minutes and then I served it topped with fresh corriander. 
It’s not a meal I would serve if we were hosting a dinner party 🤣 but it ended up being a really satisfying dish. We ate the whole pot of it and the kids had seconds before an early bed for both of them.  Sometimes it’s the quick throw together dinners that surprise you. .
I was really happy that we didn’t have to have take-away food and proud that I managed to whip up something that tasted so good. The trick is to have a kitchen full of fresh produce, when that’s all you have, there’s no other option. .

I am definitely not a good cook. It stresses me out, I normally mess it up, and I just don’t have time for it. So, any recipe that involves minimal ingredients and takes hardly any time is a winner with me! I actually love eating cottage cheese straight-up, or with fruit and granola mixed in, but this blended pudding tastes like dessert and is perfect on days when I want something a little sweeter to get me going. It has just under 200 calories per serving, so for breakfast I either eat the whole two-serving batch, or drizzle on some extra peanut butter.

Quick Paneer Tikka Skewers for a lazy afternoon. Cubes of pillowy soft cottage cheese marinated in thick yoghurt and spices. Baked to perfection and sprinkled with the magic Indian powder, that is, chaat masala.

Marinate veggie cubes and cottage cheese in : hung yoghurt, turmeric, red chilli powder, cumin coriander powder, tandoori masala, ginger garlic paste. Refrigerate for a couple of hours and then bake @ 220°C for 15 minutes in a hot oven. Serve with lime wedges, with some creamy tomato chutney, a random garnish leaf and a smug face.

To brighten up these first autumnal colder days, there's nothing more I need than: CHOCOLATE🍫 Made these yummy chocolaty coconut cup cakes [recipe⬇️!] the other day ... and they're just super indulging!😍👌

CHOCOLATE COCONUT CUP CAKES (serving about 8 - I used paper baking moulds!):
•
Base:
-50g cashews
-100g dates
-1 tblsp cacao
-1 tblsp coconut blossom sirup
➡️Put all ingredients in the food processor and mix until you get a sticky mass. Fill in cup cake tins.
•
Coconut layer:
-100g cashews
-50ml coconut milk from a can
-juice from 1/2 a lemon
-1 tblsp coconut blossom sirup
➡️Put the cashews in a powerful blender and blend until they turn into a powder. Add the other ingredients and blend until you get a creamy mass. Fill in the tins as second layer.
•
Top chocolaty layer:
-100g cashews
-3 dates
-100ml coconut milk from a can
-2 tblsp cacao
-1 tblsp coconut blossom sirup
➡️Put the cashews in a powerful blender, blend until the turn into a powder. Add the other ingridients and blend until you get a creamy chocolaty mass. Add as final layer.

➡️Freeze the cupcakes for at least 3 hours to get a perfect strong and solid texture. Defreeze for about 20-30 min. Add rose blossoms on top. And enjoy 🌹
