It was just me at home tonight and I was too hungry to wait for take out. Ended up raiding my pantry and found a jar of green olives, a couple tomatoes and a half empty #glutenfree spaghetti bag. Low and behold I think this is my #top5 pasta of all time!

Ingredients:
1/4 pound of spaghetti of choice
1/4 cup green olives (or more to your liking)
1/2 cup chopped tomatoes 
2tbs GF breadcrumbs
1 garlic clove
1tbs butter
1/4 tsp red pepper flakes
Olive oil
Parsley
.
Boil pasta to package instructions. Heat pan on medium heat with 2 turns of olive oil. Lightly brown chopped garlic. Add chopped olives, tomatoes, red pepper flakes and 1/4 cup water. Bring to low simmer till tomatoes soften and create sauce, approx 5-8mins . Add salt to taste (dependent on saltiness of your olives). Meanwhile in a separate pan melt 1tbs of butter or olive oil. Add 2tbs of breadcrumbs and brown. Turn off sauce heat and fold in strained pasta and parsley. Top with breadcrumbs and enjoy!
Makes 1 serving. Double or quadruple recipe for your needs!

Being a mom of 4 boys Mac and Cheese has always been a family staple, homemade Mac and Cheese was always a hit for supper and definitely a comfort food. Tonight Mac requested it for supper. Tonight I was quite thankful for our Instant Pot as I didn’t relish the thoughtful heating up the kitchen and all the dirty dishes from making this classic on the stove. Oven baked flathead in butter sauce
.
Ingredients:
400g flathead fillets
80g butter, diced 
2 tablespoons capers 
1 tablespoon chopped parsley 
Juice of 1 lemon 
Salt and pepper 
Large handful rocket 
1 fennel bulb, tops and outer layer removed, middle thinly sliced 
2 tablespoons dried currants or raisins 
1 tablespoon olive oil

Method:
Preheat the oven to 180°C and line a baking tray with non-stick paper. Place the flathead fillets on the tray. Place a few pieces of butter on each fillet. Sprinkle the capers, parsley, half of the lemon juice and a pinch of salt over the tray. Place in the oven for 10 minutes, or until flathead is cooked through. 
Place the rocket, fennel slices, currants, olive oil, remaining lemon juice, and a pinch of salt and pepper into a large bowl. Toss to combine. 
To serve, divide the salad and flathead between four plates, and top with butter 
sauce. Serves 4.

5 TIPS FOR EATING AIP ON A ROAD TRIP

Hey, everyone! How’s your August going so far? I just completed a 2,800 mile road trip from Washington State to my school in Ohio with my brother, I moved into my dorm, started my second year of Community Advisor training, AND I am about to start school for the first time in 9 months! Needless to say things have been busy, and overwhelming but I am feeling good about it all.
•
I want to share a few things about what I learned while eating AIP on my road trip. Early mornings and late nights, driving through rural middle America, and camping offered a lot of challenges to over come AIP-wise, but reflecting back on it, I think it went pretty well! Here’s what I learned:
1. Make meals ahead of time🥒- Before you leave, pack a cooler full of food. For me, it worked best to have some “ready to cook” food for when we got to our hotel room or campsite, and some “ready made” food for lunch and snacks on the road. This eliminates the stress of wondering if there will be any food for you to eat. Pro tip: Freeze your marinated meat, it will help keep your cooler cold and it will last longer. 
2. Stay in hotels or campsites with kitchens⛺️- When making your accommodations, find places that allow you to have access to a kitchen. My brother and I mostly stayed in KOA’s which usually have one kitchen for guests to use. This was when we were able to make our “ready to cook” food. 
3. Plan your grocery store stops💵- Instead of trying to find a grocery store when you find yourself running out of food, research grocery store options along your route before you leave and add them into your total trip time. 
4. Baby food👶🏼- organic baby food makes a really great non perishable back up snack in a pinch.
5. Don’t forget dessert!🍫- I have a huge sweet tooth, and I always like to have a treat around if I feel like I want it. This can be as simple as a dark chocolate bar or fruits. Just make sure you bring some foods that satisfy your soul.

I’m not one to brag.....but these lettuce wraps are better than any restaurant lettuce wrap I’ve tried! They seriously took under 30 minutes to cook(and I was moving slow) and I love a good “build your own plate” type of dinner. Perfect for kiddos or dinner parties and everyone gets exactly what they want. Super simple recipe below!👇🏼👇🏼
-add diced garlic, ginger, carrots, red pepper, and mushrooms to pan with olive oil and sauté about 5 minutes
-add 1 lb ground chicken to pan (and any spices you like)and cook until done
-peanut sauce is just 1/4 cup coconut aminos, 1 tbsp sesame oil, 1 tbsp white or rice vinegar, pinch salt, pinch garlic salt, pinch ginger powder, 1 large tbsp peanut butter and 1 pitted date to pan. Simmer until date is soft. Transfer to blender or food processor and blend until smooth.
-add chicken/vege mix to romaine leaves and top with peanut sauce
-I also added chopped cashews, green onions, bean sprouts and sriracha 
Voila! Healthy, quick and tasty dinner that your guests can assemble themselves. To make whole 30 compliant just use almond butter instead of peanut butter. Vegetarian or vegan? Guys, I was so excited when I heard that Trader Joe’s was going to be carrying a protein ice cream by ProYo. I know that these have been available for a while at other stores, but this is new to TJs. There will be 6 flavors available. The TJs team member I spoke to did warn that some of the flavors will be seasonal. Today I tried the cookies and cream and chocolate. I thought both were so good!! I honestly thought they tasted so close to regular ice cream. I will admit that mine was slightly melted when I got home (I had to make a quick stop to Anthropologie 😂), but I thought the flavor was great!! The cookies and cream had a slight artificial taste to me, but the chocolate was spot on!! I loved both and will be testing them on the kiddos later today! Oh and they are $1.99 each😱. *I’m posting a picture of all the flavors that I saw in a group I’m in. I can’t tell who the original IG’er was in the pic to give credit. If it’s you, let me know so I can give you credit 😘

I got back late from doing my little ones karate club and since I've been feeling nauseous with this inner ear malarky I didn't fancy anything in particular so raided the fridge 😋
Chilled chicken (f), cucumber (s), mini tomatoes (s), carrot (s), yellow pepper (s) , pickled onions (s...ooh I can't get enough of these little buggers!), a warmed flat bread and a small pot of houmous! I was defeated though, I couldn't eat it all. Keeping everything crossed for tomorrow....question is though, do I weigh blind or know the score?!

Super lovely dinner. Cooked salmon from frozen and whole thing ready in 20min. The savoury rice is from @tescoirl and is synfree. It’s a lovely alternative to plain rice and I’d probably add a bit of extra seasoning to it. .

Dinner tonight was a @marksandspencerfoodpr veggie beetroot and caramelised onion veggie ‘’hot dog’ with #sweetpotatomash and veg. Loved this #veggiesausages !! Never had it before but it was delicious!! The nicest #vegetariansausage I have tasted :) love #marksandspencer new #veggie range and most of it is #glutenfree too which is amazing!!! Lovely convenient, quick delicious dinner!! Really enjoyed it :) really challenging myself tonight and increasing my portions as I have been told I need to up my game. Super Quick Stuffed Mushrooms

It's the weekend!! I hope you've got some amazing plans lined up. 
This dish is so embarrassingly simple, I almost didn't put it on the blog, but its so delicious I thought I had to share it! 
Last night my husband and I ended up eating late due to working, and we really didn't fancy spending ages cooking, so I thought I'd throw these gorgeous ingredients together, and had a nice light dinner on the table in 20 mins.  As we were eating late, the photo wasn't taken in natural light, so I'm not best pleased with the icky yellow hue, but I have tried to make the most of it.

Ingredients (serves 2): 4 Portobello Mushrooms
8 Cherry Tomatoes, cut into quarters
6-8 Basil Leaves
4 slices of Goats Cheese

Method:

Preheat the oven to 200°C. Put the tomatoes into the mushroom cups and put in the oven on a baking tray for 20 mins. 
Once cooked, add the basil leaves and top with the goats cheese and serve.

3. Thinly slice chicken breast. Spread pita with yogurt mixture. Sprinkle with shredded lettuce then top with chicken and cucumber mix. Top with additional yogurt mix, roll up and enjoy!

Top with a drizzle of sesame oil + ume plum vinegar + coconut aminos + sriracha + fresh cilantro = bomb meal everyone loved in 20 mins! Go team!

It’s been a bit quite over here - sorry! We’re battling through teething and this has meant lots of cuddles and not much time for any cooking... so last night I quickly fried courgettes and tomatoes (homegrown - get me 🤓) with some garlic, paprika and oregano. I then mixed this with some pasta. Served it with some emergency sweet potato falafels (thank goodness for batch cooking). Took about 10 mins in total and bear 🐻 wolfed it down. This Sriracha Honey Beef Stir Fry is the dinner I turn to after a long evening settling the boys to sleep (which is a never ending battle these days). It takes 10 minutes from start to finish and is packed full of flavour, protein and veggies. I have succumbed to shortcuts here and used a pre-prepared veggie stir fry mix and beef mince for speed. But that sriracha honey sauce really means business making the whole affair spicy, sweet and garlicky. This dinner is your new weeknight staple, with or without rice.

This soup is one of my favorites!! It’s super light but still fills you up when you need comfort food that doesn’t weigh you down. ———————————————————
Lemon Leek Soup
•four leeks, trimmed and cleaned, sliced thinly on the bias
•2 tbs olive oil
•two medium white sweet potatoes, cut into 1 inch cubes
•6 cloves of garlic, minced
•Handful of fresh sage, roughly chopped
•3 tbs fresh thyme
•4 cups vegetable stock
•2 cups water (as needed for texture)
•fresh lemon juice from one lemon

Heat olive oil in a stock pot over medium heat and add leeks, stirring for 5 minutes. At sweet potatoes and S&P and cook for five minutes. Add garlic and sage and let sit for two minutes, then toss in the vegetable stock and thyme. Cover and let cook for around 15 minutes until the sweet potatoes can be easily pierced. Squeeze in the fresh lemon, stir, and serve! I usually add some leftover pesto for good measure.

Especially when you add spice & all the kale mix your heart desires. Tomatoes from the farmers market don’t hurt either. So sweet & so tasty!! && yes that’s plain white rice & yes I know white rice is low on the healthy rice food chain & no I don’t feel badly about it & yes I measured it out b/c your girl is all about that portion life & YES YOU SHOULD MAKE THIS BOWL!!! 1.Buy plain yogurt for a healthier option and to avoid all the added sugars. [I buy Greek yogurt to get my protein in]

2. But frozen fruit so it won’t go bad and warm it up in the microwave for about 30 seconds to defrost. 
3. Add honey and cinnamon for some sweetness, just remember honey is still sugar so moderation is key! 
4. And of course you can’t beat a yogurt topped with granola [my homemade chocolate coconut granola]
