This was dinner tonight - less than 200 #calories and about 15g of #protein .
I cooked a pound of ground beef and a pound of ground turkey together and seasoned it with @traderjoes BBQ rub in a cast iron skillet until it was cooked through, stirring every few minutes.
I drained the meat and put it over a brown rice and quinoa blend and topped with #ghughes sugar free hickory BBQ sauce.
I steamed a pound of baby carrots in the microwave with a bit of coconut oil, chili powder, cinnamon, ground ginger and turmeric for 15 minutes on high, stopping every 5 to stir.
I served this with @bushsbeans low sodium vegetarian baked beans.
Shrimp and Summer Veggie Foil Packs😍
1 small zucchini, ends trimmed, sliced into half moons (1 1/3 cups)
1 small yellow squash, ends trimmed, sliced into quarters (1 1/3 cups)
1 pint grape tomatoes
1 green bell pepper, chopped (1 cup)
1/2 small red onion, chopped into chunks and separated
1 1/2 cups fresh corn
1 1/4 lbs. large (21/25) raw shrimp, peeled and deviened
3 Tbsp olive oil
3 garlic cloves, minced (1 Tbsp)
Salt and freshly ground black pepper
1 tsp paprika
1/2 tsp celery seed
1/2 tsp dried thyme
1/4 tsp cayenne pepper (or to taste, optional)
1 1/2 Tbsp minced parsley, for garnish (optional)
4 lemon wedges, for serving
Preheat a grill over medium-high heat to 425 degrees.
Cut 8 sheets of 12 by 14-inch heavy duty aluminum foil. Use two sheets of foil per packet.
To a large mixing bowl add zucchini, squash, tomatoes, bell pepper, red onion, corn and shrimp.
Drizzle over olive oil then sprinkle over garlic, 1 tsp salt, 1/2 tsp pepper, paprika, celery seed, thyme and cayenne pepper.
Toss mixture well to evenly coat.
Layer two sheets of foil per packet, with the first sheet of foil laying in opposite direction of the second. Divide mixture among double lined foil adding it to the center in a rectangular shape.
Wrap up sides of first sheet of foil and roll edges several times to seal, then place second sheet going opposite length and wrap while rolling edges to seal.
Grill until shrimp is cooked through, about 12 - 14 minutes, while filliping packets over to opposite side once halfway through grilling.
Carefully open packets as steam will escape. Sprinkle with parsley and serve with lemon juice for spritzing.

Yesterday was family dentist day- and I was laying in the chair across from this guy when his hygienist asked “any changes in medications?”
My eyes swelled up a tad as I turned to see a huge smile and my boy say “I’m no longer on any medication.”
Man- I remember saying those words too! I remember the pride when I could say I’m spending more on nutrition, less on medication. Focusing more on what I can control and less in what controls me!
We talked about it after the dentist- I asked him how he feels about me sharing his story. How he feels about me telling the world he was so behind in reading due to focus/ADHD, how he quit going to school due to anxiety, how social situations were so scary that he avoided them—— and at first he said he was embarrassed to share.
After we talked about his ability to help other kiddos with similar situations simply by sharing his story- he smiled that smile and said- “mom, I didn’t know my story made a difference.”
He isn’t perfect - his story isn’t over- he has a long way to go——- but because of the teachers that knew his potential, the doctors that understood his brain, and this Mama who refused to let her baby get lost in a stereotype—— he is med free, making good grades, having fantastic friendships and inspiring other kiddos like him to know they too can do it!!!
