After being sick and not working out for two weeks then getting my ass whooped at @rinoathletics this morning, this breakfast is hitting all the spots 🙌🏻

I typically feel best if I give my body time to rest and get back into parasympathetic state before downing a huge breakfast (or anything really) after a hard workout.
.
Digestion starts in the brain, so ensuring you’re ready to rest + digest is extremely important for proper digestion. If you’re eating rushed or too shortly after a workout, you might notice getting full super fast, feeling bloated, having acid reflux, or just generally not being hungry at all- but eating anyway. None of these things are optimal for proper digestion + are signs of digestive stress.

It’s been about an hour or so since we stopped working out, and my hunger is through the ROOF finally so I whipped this up for stu and I 👇🏼

I really really dislike a #treadmillworkout. I would rather be outside. But the way this humidity is set up, it was not going to be ideal. But. Here’s another #nsv! I have never been able to match my treadmill pace with my outside pace! Today I did up to 4.8 on the treadmill!!! 😳🤭 I’m amazed at myself. I ran some. Walked some. I completed 2 miles In under 30 minutes! I’m so proud of these small accomplishments!

Today is the first morning in around 2 months that I’m not having coconut cereal for breakfast. Why? Because I ran out and am yet to receive my next shipment 😅 However, I look at this as a very good thing since I’m so the person that becomes obsessed with one food and will eat it for months on end 🙋🏼‍♀️

Last night marked the start of our July 60 hour metabolism reset & I couldn’t be MORE excited to fast‼️ .

 considering my diet the last ✌️ weeks can only be described as YOLO 🤷🏼‍♀️thanks to enjoying ALL the 🍺+🌭🍔🍕 over the 4th & our St Louis weekend- I expected to look WAY more like a busted can of biscuits 🤣 .
.
Its AMAZING to see how much my body has been changing this year and reacting differently to foods.  Before even a couple of DAYS off my color coded nutrition plan would lead to major anxiety, weight gain, and bloat. Where NOW thanks to daily ketones + monthly rebooting + fitness I really don’t HATE where I’m at post vaca & dare I say, even though I’m not at my best, I actually love my body- which feels pretty damn cool😍 .

Less then 48 hours until I hit BETTER stay tuned for the results ☺️

Hidden behind the beautiful spot of Lipica there is a small church that only the locals really know. Legend has it that a man was suffering from an incurable disease (you have to forgive me but I can't remember it exactly , I think it was leprosy) and he made a promise to God. The promise was that he would build a church in the forest as a way of celebrating God and allowing a place for people to come together and worship. As a way of repayment it would seem, that man was cured of his illness and his beautiful church in the lush forest still stands today.

As a side note if I have gotten this slightly wrong please feel free to correct me.

I purchased this shirt for $3 at a bargain store in April. It was so tight I thought I was going to have to cut it to get it off. A friend helped me get it on to wear with a high waist maxi skirt. I started #couchto5k a couple weeks after I wore it. Yesterday it was actually a bit loose. The reason this is so important is because the scale hasn’t shown over 5 pounds lost in three months. My body is changing. My clothes are getting loose. I understand the workouts are converting fat to muscle. It’s a reminder to not be a slave to the scale. This is a great #nsv!

3 Large Eggs
50g Chorizo
120g Kale
1/2 tbsp Butter or Ghee
60g Cherry Tomatoes

👉🏼 Recipe
1. Heat cast iron pan to medium, add 1/2 the Butter / Ghee.
2. Add the chorizo, Kale & Tomatoes. Sauté until softened
3. Remove. Best the eggs in bowl.
4. Use paper towel and wipe pan clean. Add the remaining butter.
5. Add the eggs to pan, fold in sides and slowly cook on low.
6. Fold over omelette & Add the vegetables.
7. Season to taste ✨

Greens really compliment most meals, especially if you get a spicy/herbed mixed greens or super spicy arugula (favorite), it adds a great new flavor dimension to your food. Try it! Does it even exist? I guess it depends how you like your steak. The special guy in my life prefers his medium and I like mine a little past medium. That alone proved a challenge because each steak will require different cooking times. .

After many smoke alarms going off and watching every Gordon Ramsey video on YouTube on repeat I’ve decided on a winner. .

The perfect steak:
1 ribeye steak, 1 1/2 inches thick
1/4 cup balsamic vinegar 
Salt and pepper 
2 T butter 
1/2 cup wine, white or red. .

Instructions:
Rinse steak and pat dry. Place in Large ziplock bag and add in balsamic vinegar. Seal bag and pound lightly with a mallet, not to thin the steak but to infuse the vinegar. .

Meanwhile, heat your pan to medium. Add in 1 T grape seed oil (least smokey, could use lard too). Once hot, put steak in pan, set timer for 3 minutes, and season top side liberally with salt and pepper. 
After 3 minutes use tongs to brown the top, bottom, and sides of steak. Then flip steak over. Set timer for 3 minutes, season with salt and pepper. Add butter to pan and begin basting over top of steak. After 3 minutes, pour wine in pan to deglaze. It will bubble up. .

At this point, for medium, remove from heat and allow steak to rest 7 minutes. For a Little past medium, put pan in 400 degree oven for one minute. Then allow to rest 10 minutes. .

6. Enjoy + only one pan to wash up 😎

What’s your favorite pizza recipe? When my family wants #pizza 🍕 for dinner here’s the best #grainfree #glutenfree  pizza. 
I usually make a cauliflower crust for myself and load it with spinach pesto. However this crust is the famous fathead dough ( almond flour). Deets below. I topped  this with homemade tomato sauce, mozarella, Parmesan, uncured no nitrates pastured pork pepperoni and basil 🌿 takes 3 mins to prep and 15 mins of baking time. .

Fathead dough - 
3/4 cup almond flour 
1 3/4 cup mozarella 
2tbsp cream cheese 
1 egg 
1 tbsp dried Italian herbs 
Mix the mozarella and cubes cream cheese in a microwave safe bowl and microwave for 60 seconds. Mix it well. Add the egg, almond flour and herbs and knead quickly to form a sticky dough ( feels pretty wet) place the dough in between parchment paper and shape into round by pressing down with your hands and rolling to desired size and thickness. Pierce the crust with a fork and then Bake at 425 deg F for 10-12 mins. Let it rest for a minute before loading the toppings. 
Tomato sauce prepared while crust  is baking- 2 peeled canned cento tomatoes blended well with 2 tbsp of olive oil and 2 cloves of garlic. WHAT - yeah that easy. 
Add the desired toppings on the crust and back in the oven for 2-3 mins.
It’s that easy folks!!
