Thanks to Chef David Chang’s flavor-mashing brain, we have the condiment miso butter—a simple mixture of miso paste and butter that’s bursting with umami. Perfect for all occasions!
FILIPINO CHICKEN ADOBO cooked in an @instantpotofficial electric pressure cooker. This recipe is adapted from The Adobo Road Cookbook by @burntlumpia. Keeping the recipe real, I replaced a few ingredients for healthier alternative. Made with organic skinless chicken drumsticks, white vinegar, Bragg Liquid Aminos, garlic, date syrup, black peppercorn, bay leaves & red pepper flakes. Chicken adobo is savory, tangy, slightly sweet, flavorful & chicken is falling-off-the-bone tender. Best eaten with brown rice.
10 organic skinless, bone-in chicken drumsticks and/or thighs (see Comment).
4 oz. Bragg Liquid Aminos (113g)
9 oz. distilled white vinegar (255g)
2 tbsp. date syrup or brown rice syrup (26g)
6 large cloves garlic, crushed (34g)
2 tsp. whole black peppercorn (5g)
2 bay leaves
1/2 tsp crushed red pepper flakes (optional)
Place chicken into the insert of the Instant Pot. In a small bowl, whisk together the Bragg Liquid Aminos, vinegar, date syrup, garlic, black peppercorn, bay leaves & red pepper flakes until thoroughly blended. Add sauce to the chicken. If time permits, allow the chicken to marinade in the sauce for 1 hour before cooking, rotating chicken halfway.
Place cover on pressure cooker & lock. Make sure pressure release valve is set on SEALING. Cook on HIGH PRESSURE/NORMAL for 10 mins. When cooking is done, unplug pressure cooker & allow pressure to RELEASE NATURALLY for 10 mins. Then FORCE RELEASE the rest of the pressure.
Transfer the chicken to a serving platter. Loosely cover with foil. Strain the sauce through a sieve & discard solids. Pour the sauce back into the Instant Pot. Bring sauce to a boil on SAUTE/MORE mode (uncovered), then simmer on SAUTE/NORMAL mode for 10 mins. to reduce & thickened slightly. When done, pour sauce over chicken. Serve with brown rice or rice of choice.
Yield 4 to 5 servings

Spaghetti Squash with Mushrooms and Pancetta
Spaghetti squash is a magical vegetable that starts out as a hard, unassuming squash and turns into toothsome yellow spaghetti. Steaming is the best method for making this transformation, and a quick trip in the Instant Pot does the trick. Crispy pancetta, savory mushrooms, and salty parmesan are a simple but full-flavored topping for a low-carb dish.
Instant Pot Mashed Potatoes
•4 lbs red / gold potato mix
•2 tsp sea salt
•water to fill above potatoes in pot
•1 cup chicken broth
•1/2 cup milk
•1 stick butter
•1 Tbsp sea salt
•1 tsp pepper •Cut 4 lbs small red / gold potatoes into 2 inch cubes •Place in pot and fill with water and 2 tsp of sea salt until potatoes are just covered •Close and secure lid, press MANUAL and set to 8 minutes. Make sure valve is closed. •When pot beeps, release all steam until lid unlocks •Drain water from potatoes and mash potatoes in pot with chicken broth, milk, butter, salt, pepper (may adjust mashing ingredients to your taste & creaminess)

Roasted Tomato and Feta Risotto
If you’re not using your Instant Pot to make risotto, then stop right there. You’re having risotto for dinner. The cooker takes ordinary rice and turns it into a creamy, decadent dish and you barely have to stir. For a slightly different take on the traditional dish, I combine sweet roasted garlic and bursting tomatoes with salty feta and fresh chives.
